Hello Folks!
So here’s a fab wee recipe for crusty rolls! And these rolls are seriously crusty :D They’re not JUST crusty rolls, these are SCOTTISH crusty bread rolls :) Fabulous taste and texture! In my opinion these rolls are delicious with a good scrape of salted butter…or for dunking in your soup.

What I used: Makes half a dozen rolls
500g (17.6 oz) Strong white bread flour
30g (1 oz) Lard
7g (2.5 Teaspoons) Fast acting yeast
10g (2.5) Teaspoons Sugar
10g (2.5 Teaspoons) Salt
400ml (14 oz) Cold water
A little semolina or rice flour for dusting
A handful of Plain (all purpose) flour for the work surface

My hubby loves a Scotch pie on one 😂. I tried it ones and had to admit it was good 😂
These rolls look very close to Mortons rolls, never been able to get them on the east coast but every time i go to Glasgow and walk past a shop selling them it's like an unwritten Scottish law to stop and buy some! Definitely going to try this recipe 😁

These are not just rolls - they are Glasgow morning rolls 😋 The rest of Scotland doesn’t know what it’s missing! I use Canadian extra strong bread flour with higher gluten and bake at 250°C as my husband loves them well-fired. Thanks for spreading the word. Best wishes from a Granny in Aberdeenshire. 😊
Look great! I like the dark broon wans! Throw some butter on and then a pack of roast chicken tattie chips to make a chip buttie. Slice of Black puddin' and a fried egg. Slice of your Lorne Sausage. The best!

as a home bread maker these look so nice and will make soon :)
Thanks. Just made these and they are very good - lovely taste from that long fermentation which also makes them easier to make. Just leave the dough to next day and much less kneading than most bread. Only faff is that you are right, the dough is very sticky. But just need to accept that as you make the rolls. Comes together in the end.

Definitely want to try these as it looks a bit easier than the other roll recipe, which I made and were terrific. I like the ease of just sticking the dough in the fridge overnight and baking up in the morning.🏴🇺🇸

If doing it by hand there are a number of kneading techniques for a sticky dough I've discovered a slap, roll and quarter turn.

If you do that they won’t have that Scottish taste. There’s nothing like one of these Glasgow rolls. One thing I miss living in the US. 🇺🇸🏴

I’m also exploring the idea of baking a lot of baked potatoes. We have Idaho potatoes here and then I froze a whole bunch wrapped in plastic and then foil and I’m gonna see how they go to make my own little containers of jacket potatoes to heat up in the air fryer for dinner.
5 mins in a microvave, then rub with oil, salt, and pepper. Cook for up to 25 mins depending on size in airfryer at 200°C uncovered turning every 5 mins always gives me a better baked potato than in my oven. Nice crispy skin and fluffy inside.
Thanks for the recipe, they look magical. Do you have a video/recipe for making softies (baps) to use with Lorne sausage. Sadly I can’t get a decent bap in Singapore.

For a great snack you can't beat a lovely crusty bread with some butter and jam. And these look absolutely scrumptious!
they look lush - nothin beats traditional British crusty cobs - Could I use veggie shortening in place of the lard?

Those look delicious! Can I use all-purpose flour in place of bread flour? I've actually never bought bread flour or semolina before, but I may have to try it.
I would definitely get bread flour. It gives a better chew and structure to bread and rolls. You should be able to find it next to the all purpose flour at the grocery store. Finding the lard might be a bit hard if you’re in the US. I’ve had luck finding it at Target of all places. Or if you have a local butcher.

Great for sandwiches, breakfast rolls, dipping in soup, chip butty's, put anything inside it will taste great 😂

I love these rolls but I never knew about the lard. Terrible news as I am veggie since 1974.
Vegetable Shortening should work
Lard is very high in vitamin D and really good for you.
@@catherinewhite2943 The thought of lard to me is stomach churning.I have been a vegetarian since 1974. I cooked meat for my family out of love but it is not for me.
You could try vegetable shortening 💗
@@margodoyle3557my friend is vegetarian as well. I’m always looking at ingredients now when I buy food items for her, especially wine gums. The gelatin free ones are not readily available in the US.

What is the difference between strong bread flour and regular flour?
Yeast!
Bread flour has more protein not yeast. Bread flour gives a better structure and chew to your bread. There is no yeast in bread/strong flour. You add yeast to the flour to make it rise.
