      I do find it odd (but also am very grateful) that poutine snobs or poutine purists don't exist. Everyone seems fine if someone starts tossing braised beef or lobster on a poutine, which IS fine. Love fancy poutine as much as the stuff you get from a snack bar or a chip truck.

      Would be a decent idea but he would get unnecessary flak for it. He normally does one that is CLOSE to traditional, if he said "this is the traditional way of making this dish" he would be bonked on the head by angry children.

    Tip for everyone, if you’re ordering a poutine for delivery ask them to package all the ingredients separately!! Air fry your fries when they get there, add the cheese and the gravy and you got a fresh tasting poutine via delivery :)

      And you also get more most of the time! Since they can't really measure how much they would usually put, you often end up with more of everything to compensate and fill the containers they have.

    As a lifelong Canadian boy who is perfectly content with Costco or even McDonald's poutine, but always knew that they were lacking. Both recipes looked absolutely amazing and had my mouth watering something fierce. I always put a little grated cheese on my poutine anyways to make up for what the curds miss and that classic poutine especially just made my heart happy, although I definitely want to try the fancy one.

      Truer words have never been spoken. Poutine is sloppy by definition. I see restaurants in montreal trying to make it fancy with foie gras and honestly, the "fancier" it is, the grosser it looks. Kind of backward thinking when you consider every other food lol.

    Okay, a word about the soggy poutine: it's part of the experience! You get your poutine, nice and hot, it's crispy, you burn your mouth, you wait, it's soggy but less hot and still delicious

    As a Canadian i can tell you putting those green onions on top of your poutine is NOT sacrilegious. It's fresh it's beautiful. Best part about poutine is there's no end to the combinations you can do, one of my favourite's is to sauté up some tasty mushrooms and sausage and make my own little "breakfast poutine". Make it your own and enjoy :)

    I am from Quebec and the some rules or secret for the best poutine is 1. Crispy homemade style French fries, they must be crispy a the time you serve. 2. The cheese curd must be day fresh and must not been in a fridge before. It must be skwiky. 3. Don’t put to much sauce, you don’t want a "soup" with soft French fried. Texture you feel while eating a poutine is important, even if most of people don’t realize it. And it’s probably the main reason foreigners think it’s bizarre to mix cheese, French fries and gravy. Yours look very good by the way.

      I would like to visit Montreal one day. It's a nice city, and has many great things, like food, great bands, and festivals. My maternal grandfather used to live and work in Montreal, in the early 1900s, after he left Chicago, after he came to North America, from Poland, in the early 1900s. He then went to Alberta, where his two older sisters and their husbands came to before he did. This poutine Joshua made looks great. Poutine is awesome. Cheers!

    I'm French Canadian and live in Canada. I've eaten lots and lots of poutine. Kind of a connoisseur actually! Love the recipes and executions!
    Josh, I've been to Colombia many times in recent years and they do something called "Salchipapa". This basically translates to fries with sausage. The interesting bit is that today's Salchipapa is a whole new combination of ingredients. It incorporates crushed potato chips, sausage/weiners/chicken/ground beef/rib meat/bacon bits/cheese sauce/corn niblets etc in many variations and combinations. Not all at the same time! Some even go as far as lettuce, chili peppers etc.

    Good job, Joshua! I have also known the fries to be soaked in cold salt water for an hour before draining and patting them dry, when making poutine. (Trade secret.) Some rotisserie chicken restaurants use the meat drippings to make the best poutine gravies. Hello form Canada, bye the way.

    As a quebecer, I am really happy that you made a video about poutine! You actually pronounced it like a french canadian the last time you tried at the beginning of the video. When the borders open, I invite you to the best poutine restaurant in Montréal: La banquise. It has some fancy poutine, some traditional, but it is a must for poutine enthusiasts.

    Edit: That first poutine is surprisingly accurate if I do say so myself but the second one, although it is definitely a beautiful dish I would love to take a bite of, it is simply NOT a Poutine. The essence of a Poutine is simple poor person food topped with whatever you got in the fridge: Potatoes and Cheese curd because there are many fromageries here that sell their curd for cheap. By definition, the fancy dish is not a poutine but the first one is a pretty good poutine.
    That is MY verdict, great vid, 2 great dishes, the second one is just lost the soul and character of a poutine being the poor man’s dinner after a long day’s work

    I have never found cheese curds available anywhere. But Prince Edward Island introduced me to chips and brown gravy and it's my joint favorite food with mac and cheese. I cannot wait to get my hands on cheese curds for proper poutine. Canada, you have my heart's tastebuds. Even the potatoes on PEI are the best I've ever had.

    I'm Canadian but not French. My family and I check out chip trucks every summer and do reviews for my blog. In my research, I was taught that poutine sauce is actual a gravy of different meats, not just beef. Usually chicken and beef because it's easiest, but I've heard veal can be used. I've never seen it with beer added, but that sounds yummy. The best poutine we had was in Tadoussac, Quebec, at a little cabanes à patates (chip wagon).

Most people buy frozen French fries and then fry them in oil. So they’re saying people are gonna be criticizing him for not making his own cheese curds in the first recipe is regarding the fact that he usually makes his own things from scratch.

    As a quebecer myself, poutine is really up to personal taste for the ingredients and texture, personally i prefer more soft brown fries but that cheese on the spot and gravy looks fantastic gotta try that recipe, people have explore every possible ingredient with this simple dish, any ways is always rocking that dish

    Both look great! Us Canadians love trying to make anything into a poutine. Turkey dinner poutine, Donair poutine, Pulled pork poutine, Dill pickle poutine. Any Canadian that gives you grief for mixing it up a bit would be a hypocrite.
