First off, thank you for your service, retired SDPD here. I went on a little tour of Chicago with a Sgt in Chicago back in the late 90s. Don't get me wrong, I LOVE Chicago Dogs. There was just something very special about the seasoning in the water I added. Maybe it's more of a Ballistic Dog? Cheers!
I have to agree with you, being a retired union sheet metal worker, I can't tell you how many times we got dogs off a cart, Or a hole in the wall hotdog place, I was never a "drag it through the garden" guy, mine was just a Dog with Mustard and a dash of Celery salt. Personally, Portillos was always a poor choice to a Dog.

I had a heart attack in 2009 and after rehab they wouldn't put me back as a detective outside in the fresh air. They offered me a "white shirt" and to chain me to a desk. I had 36 years and said..."No thank you". Retired, moved to Florida and go fishing as much as possible year 'round. When I'm not fishing, I am doing a cook on the smoker and copying your burger recipes! I'm happy every day I'm alive!
And BTW...that bright green relish brings back so many memories of taking my kids to Wrigley Field to watch the Cubs! Of course we always got those Vienna dogs with that bright green relish!
NYC style is always Sauerkraut & Mustard. Sabrett Onion sauce is also an acceptable classic. I've never heard of any hot dog cart adding spices to the water. Great job, Keep it up!
I’m a native upstate NY resident and we do eat our dogs with brown mustard and sauerkraut, but we also eat them with chilli, onions, and cheese. We use Zweigles brand dogs. However we don’t cook them in water they’re grilled. Sometimes they’re grilled and then held in a pan of water to keep them hot. Great video and two great dogs.
I’ll add Zweigles are mostly a Rochester/WNY thing. Here in Syracuse it’s Hoffmans all the way. For a NY dirty water dog, I feel like it should be Nathan’s or Sabrett. The boar’s head are good but the all beef is just different from a real NYC hot dog
I've had both dogs but the Dirty Water Dog is always my choice. A perfect example of "less is more." There used to be a convenience store near me that sold hot sandwiches, much like the bodegas in New York. They had a polish sausage sandwich. Theirs were cooked in "dirty water" with pretty much the same seasons you used but the unique part was the sausages were sliced lengthwise. You get a sandwich and they'd just pile in the strips of sausage and then optionally add mustard, cheese, onion & hot sauce. I miss those sandwiches! 😔
I never knew about the seasoned water or the connection to Greeks. That makes so much sense and explains why I can't get it to taste quite right at home. You'd have to special order Vienna beef but you're right that not every Chicago dog is a Vienna beef. Boars Head are pretty good. Little Turkish hot peppers also turn out to be good substitutes for sport peppers. Celery salt is pretty key to the taste, too. Regular relish is also often used in Chicago, they're not all neon green, though personally I dislike relish and always leave it off.

I grew up about 5 miles away from Coney Island, and we went to Nathans all the time. I really liked NEEDICKS dogs in New York, mostly because I loved the Orange Soda. my fondest memories were of walking home from school and if I was lucky enough to have 2 quarters in my pocket I could get a dog and an orange soda off the cart. Mustard and Kraut was my usual choice but I came to love the pushcart-style cooked onions in tomato sauce. Having said that I also love the Chicago drag it through the garden-style dogs. I'm originally from Chicago from 1970-1994 before moving to Las Vegas, to which i am currently living, and we have a place in Las Vegas called Windy City Beef-N-Dog and they got some awesome Chicago Style Hot Dog. So, coming from Chicago, I've always loved Chicago Hots Dogs.
Finally got around to watching this amazing video! Love your channel man cooking anything with skin on it in a seasoned broth will always make it Superior. I love sauerkraut I'm thinking Chicago dog all the way!! Maybe it's the Midwest in me
"MY" Dog is a blend of the two (from Montreal) - Steamed bun, green relish, raw onion, yellow mustard, and sauerkraut, with a European style beef hot dog (like you used). - Cheers! Sounds like we would enjoy a similar dog Greg!
I love em both so much. But totally fine with all beef doggy, any kind of mustard, raw onion, and occasionally relish. If I’m making one at home, New York, if I’m going out for one, most likely Chicago.
So I was born and raised on dirty water dogs, and they hold a very near and dear place in my heart. One major topping you didn't mention is the NY onion sauce. Also, most carts use regular yellow mustard and Sabrett dogs (not that I'm knocking Boars Head). I DO however love a good Chicago red hot, and all their toppings. Vienna Dog sells a whole kit you can purchase, and make them at home. One last thing... I lived on E83rd in Manhattan for many years, the end of which is the Metropolitan Museum of Art (The MET as we call it). Right in front of the MET on Fifth Avenue, on the outskirts of Central Park are 2 hot dog carts back-to-back. Ran by Mr. Rossi, a retired US Military veteran, and his daughter. Been there for years, he is considered the best in NYC. He was recently published, Google "NY hot dog king" and you'll see. Billy's on the other side of the park is right up there as well. Growing up in Chicagoland, I became addicted to the Chicago Dog. I am sure I would love that NY dog. I need to get one to try. I loved NYC before 9/11. Now I love the Big Apple to the MAX.
I'm from the Milwaukee area and Chicago dogs are my favorite. The dirty water dog is almost like the way we eat bratwurst. We do horseradish mustard and add some fried onions with the kraut. You have to have a brat bun though, a hotdog bun won't cut it.

Not a native of the Chicago area, but been here for the past 20 years. The Chicago style dog has won me over. Love them. 🌭 Portillo’s chili cheese dogs are great, too. That NY dog looks good too.

I usually ain't a 'less is more' kinda cook (I'd have to restrain myself from putting cheese on both of them), but that dirty water seems to add a distinctive flavor to those dogs that you do not want to obscure much. The mustard & kraut are just enough for toppings.
Thank you for this comparison video. I do dirty water when I make Polska Kielbasa. 4 cloves garlic, 1 Tbsp. Seasoned salt (both Lawrey's or Old Bay seasoning work well), a capful of Wright's liquid smoke, and 1/2 tsp. black pepper. I like to steam my hot dogs, but I boil my Polska in the dirty water, for about 10-15 minutes, pricking the polskas with a serving fork 3-4 times for each polska. Everything: the dogs, the sausage, Polska, all have to have a natural casing, or they split. I don't even know why you didn't put onion sauce on those DW dogs? I like both dogs for different reasons, but I agree with you, the dirty water makes a BIG difference in the taste of the sausages! Chicago, are you listening?
I'm a Slavic person, and included in my ancestry Czechoslovakian, Polish and Ukrainan. Sauerkraut is awesome, and I like it a lot. It's part of the Slavic cuisine. My dad made homemade sauerkraut with cabbages he grew on his farm. My maternal grandfather used to live and work in Chicago, after he came from Poland in 1914, before he went to Canada. I was in Chicago, in 2013, but only at the airport. I'd like to go there for longer. My maternal, great grandparents came to New York City from Czechoslovakia, in 1900, before going to Canada. 🌭 It's either sauerkraut and mustard or onion sauce mustard. Some of like me Go both sauerkraut and the onion 🧅 sauce baby. The dogs in NY are usually natural casing Sabretts. I Love Love a Boars Head dog too, like you Brother!! Yum 😋
Don’t know if it’s carried in your area, but there’s a greek seasoning called Cavender’s all purpose seasoning which is pretty much good on everything.
Hey Greg, it's ok to pick the NY style dog! 😉 We all have our likes. Me? First, I would never boil a hotdog. I want my dogs cooked over a charcoal fired grill. No gas, no boil, no pan fry - grilled. (however, after having watched this I'm sure to give boiling a try and season the water) Second, I want a brat not a hotdog. I'll eat them every great while (Nathan's quarter lb dogs) but my go to is a brat. I know I'm different but it's ok. If my voice is Chicago style or NY I'd choose Chicago. I like the toppings more than the dog.
Please do a copycat recipe video for the original Texas Weiner located in downtown Plainfield New Jersey. No one on the internet has attempted to recreate their hot dogs and they're so good!!

I'm not sure if you're known for anything other than chili dogs since that's all I've seen since I've discovered your channel. But in all honesty, I watch every dog video you post. I may be sheltered but it doesn't seem like there are a lot of people reviewing them. A good hot/chili dog is one of my favorite meals. Not proud of it but there you go.
I love new york street vendor dogs but they have to be sabretts dogs. At home i make grilled onions mixed with ketchup.i heat up some bushs beans with onions in it.put the dog on a good potato roll top with the baked beans top with onions and eat. When im eating by the vender i just put the onion sause with some banana pepers and eat. Im not a fan of sourkrout so i leave it off.
I never been to a hot dog stand in Chicago that doesn’t use Vienna hot dogs other then Hot Dougs which as closed down so that should tell you something
Hot dogs are one of my favorite foods other than a good hamburger and it would be hard for me to decide which one was best also since them two particular hot dogs are my favorite number one hot dogs to go for.
I've had the Chicago dog and absolutely love them, but this Dirty Water dog is a must try. I love kraut on a dog as well.

I grew up with NYC pushcart dogs. IMO, the onion sauce is everything.
I agree that the onions are killer sometimes; but not always. My go to are the mustard and saurkraut. The onoin saoce is for a treat though.

I’ve been working in NYC for 25 years. When I get a dog with everything from a street vendor, I usually get mustard, onion and kraut by default.

Siesel’s Meats last year carried Vienna brand hot dogs, sesame seed buns, the relish, sport pepper, and celery salt. All the Chicago Dog fixings.

Best hot dog that I ever had was cooked in water and beer then finished on a charcoal grill. Great flavor and they plump up too.
That's also the perfect way to cook brats, and Italian sausage. I add onion to the beer and water, tastes awesome!

Everything: the dogs, the sausage, Polska, all have to have a natural casing, or they split. I don't even know why you didn't put onion sauce on those DW dogs? I like both dogs for different reasons, but I agree with you, the dirty water makes a BIG difference in the taste of the sausages! Chicago, are you listening?
I'm a Slavic person, and included in my ancestry Czechoslovakian, Polish and Ukrainan. Sauerkraut is awesome, and I like it a lot. It's part of the Slavic cuisine. My dad made homemade sauerkraut with cabbages he grew on his farm. My maternal grandfather used to live and work in Chicago, after he came from Poland in 1914, before he went to Canada. I was in Chicago, in 2013, but only at the airport. I'd like to go there for longer. My maternal, great grandparents came to New York City from Czechoslovakia, in 1900, before going to Canada. back in the 70's my public school had hot dog days, 2 to 3 hundred hotdogs all cooked in the same pot, best dog's I have had.

Hey Greg, it's ok to pick the NY style dog! 😉 We all have our likes. Me? First, I would never boil a hotdog. I want my dogs cooked over a charcoal fired grill. No gas, no boil, no pan fry - grilled. (however, after having watched this I'm sure to give boiling a try and season the water) Second, I want a brat not a hotdog. I'll eat them every great while (Nathan's quarter lb dogs) but my go to is a brat. I know I'm different but it's ok. If my voice is Chicago style or NY I'd choose Chicago. I like the toppings more than the dog.
Please do a copycat recipe video for the original Texas Weiner located in downtown Plainfield New Jersey. No one on the internet has attempted to recreate their hot dogs and they're so good!!

I'm not sure if you're known for anything other than chili dogs since that's all I've seen since I've discovered your channel. But in all honesty, I watch every dog video you post. I may be sheltered but it doesn't seem like there are a lot of people reviewing them. A good hot/chili dog is one of my favorite meals. Not proud of it but there you go.

I love new york street vendor dogs but they have to be sabretts dogs. At home i make grilled onions mixed with ketchup.i heat up some bushs beans with onions in it.put the dog on a good potato roll top with
the baked beans top with onions and eat. When im eating by the vender i just put the onion sause with some banana pepers and eat. Im not a fan of sourkrout so i leave it off.
Potillios dogs are slightly smoked, that adds additional flavor to the dog.

I never been to a hot dog stand in Chicago that doesn’t use Vienna hot dogs other then Hot Dougs which as closed down so that should tell you something
Hot dogs are one of my favorite foods other than a good hamburger and it would be hard for me to decide which one was best also since them two particular hot dogs are my favorite number one hot dogs to go for.
