He’s one of the best BBQ guys I’ve ever seen. Highly impressed with bark, the tenderness of the meat, being so diverse using different meats than you would normally do to stay kosher, staying up to the high standards of being kosher and adjusting seasoning due to it. Absolutely amazing to watch such a pro work his magic

Killing livestock using shockers, or other "quick" methods actually ruins the meat, because of the shock under which the animal is killed. Slicing the throat, if done properly, in fact neutralizes any sensory, and the animal does not go into shock. There are also many more things involved, but that is a long story.

I’ve been to Izzy’s multiple times and each visit tops the prior. The food is absolutely delicious and the restaurant is smack in the middle of the buzzing Hasidic community. It is a must for those inclined to enjoy a sumptuous culinary and cultural experience.
Man burnt ends are a true meat candy. That is one thing that I loved about his video and that I love to do for my family. My first duty station was at the Brooklyn Navy Yard back in the 1970's for 18 months. Met so many great people and great places like this to go out to eat at. Shalom

Thanks for including the kosher definitions. There's a lot of mystery and misinformation about kosher animals and kosher slaughter, when it just translates to "healthy animals killed with minimal suffering".
Got respect for this guy. Stayed true to his roots and he’s clearly reaping the benefits of that. You don’t have to go “Full Austin” if you want to sell bbq in America. So many cultures have a history of smoking meat at low temperatures.
This is VERY true. Some SE guys (carolinas) claim to have invented bbq...and say, "if it isnt pork, it isnt cue..." Claiming to be the inventors. Because slaves moved there. And they took it from slaves. Which, just that sentence alone makes my head hurt. But people have been smoking meat since before recorded history. No one "invented" bbq. Its a culmination of neccessity and culture. Which is why its so diverse. Now, that said. I love central Texas bbq. But its not even the end all be all in TEXAS. Like 5+ different types of bbq in this state alone. All inspired from different cultures. And all worthy of a Taste. If everyone just did post oak, salt, pepper...itd be a very BORING existence. Because of the extreme high cost in maintaining a mashgiach and shochet on the payroll (and the fact that there are none around my area), I actually want to learn the shechitah process myself. Just need to find someone willing to teach me.

I practice to the best of my abilities and understanding, and to be totally honest, I don't care much about getting a certification. I want to do it for myself, the animals, and hashem. In the the restaurant industry people do what are called "stages" (not an American word) where they go around to learn specific foods or from specific chefs for 6-12 months. Not profitable, it's like a traveling apprenticeship. What you need is a restaurant that does the things you want and work there.
@@recoil53 1 - I’m a trained chef, I’ve done stages. 2 - no restaurant has a shochet, they work in slaughter houses and meat processing plants, and the mashgichim who do work in restaurants are there to inspect, not teach. It’s like paying a health inspector to be around you 100% of the time. They are not part of the restaurant industry, they are part of the jewish community, and so one cannot simply send a CV and become a stagier. I don’t need to contact a restaurant, I need to talk to an orthodox rabbi (who are notoriously difficult to deal with, if you’re not part of _their_ community).
Great vid, he did get one thing wrong though when he said pastrami is a rub not a meat. Pastrami, the traditional kind is made from beef plate navel. Part of what makes it unique. The rub is just in aspect of many.

That looks great, I put my fat trimmings in my brine also and smoke them for a bit and then grill on indirect heat and they puff up like pork rinds.
