- A cutting board is supposed to resist cuts from knifes right?

What a shame, the manufacturer now should definitely clarify that the cutting board is not suitable for rocket knives.

the blade could be turning because the rocket is off to the side rather than being centered with the blade? kinda like if you was to build a twin engine rc plane with only 1 motor on only 1 wing it would make the plane keep turning one way or the other depending what side its on . could try adding some fins to the sled to keep it going straight after it comes off the rail, or put a stick on the back like a bottle rocket for some drag

Awesome! Try cutting through a row of the big super balls! Would also like to see if you put a 4 foot by 4 foot piece of 3/4 plywood how far it would cut through. Or how about an aluminum engine head?( doubt it'd make it through that!) Great video as always, David.

Good news, it didn't scratch :-) - I could watch Davids antics all bloody day long...
I'm thinking the knife keeps turning is it's just not balanced at the contact point, and the point of thrust is below the contact point, when the projectile has reached the end of the track the engine is still running and over time it's just a matter of time and until the projectile begins to turn naturally.
I'm guessing.

The cutting board may have had a better chance standing up so the knife hit it, the way a knife presses longways against a cutting board because the impact force would be spread along the length of the knife instead of concentrated in a "half of thumb".
Although it's just as likely it would have torn right through anyway.
The knife rotates due to striking the board and continuing to encounter resistance. If you want to stop that, you need to position your table over the rail so that the sled is still supported by the rail during the cut. Then you will only have to worry about deflection of the knife blade perpendicular to the cut plane - not much can help that and still have a functional rocket knife! Awesome vids!
they tried that a few videos back... didn't end well :P

The deflection is coming from the placement of the blade compared to the rocket motor. Given that it always deflects to the right, matching the drag of the knife, the motor (or weight of and inertia) continues to produce higher force on the left, skewing the path of the blade.
Good catch, I hadn't thought of that. But both the mass and thrust are to the right of the blade so it should be deflecting to the left.

Find something that will catch the knife mid cut, like a high density rubber or something. That would be cool

David, is the blade of the knife symmetric or asymmetric? If it is asymmetric this is likely to be the reason the knife always goes skew when its cutting through something.

The turning of the blade might come from the blade not being in line with the center of gravity of the sled + rocket

Why would you say the "cutting board" is a mortal enemy? I'd say it is more a co-conspirator if anything as they usually work well together. The cutting board supplying not only physical support for the knife, but also a natural blockage of escape for the knives victims as the the knife slices and dices through them!
You say you made two enemies face off against each other on the field of battle. I say to you Sir, you actually weakened a natural team that usually works well together and I feel ashamed..

Howcould David doubt the rocket knife? ITS A ROCKET KNIFE.
Its poly/plastic it isn't made to stop a knife it's made to be resistent to cuts. The wood table would have a better chance at stopping the knife, even though it would explode the wood.
Try buying a sledgehammer and cutting the handle and the top in half. Double the content from one $20 item. The handle might get sliced through but no way would you make it through the hammer part. It would probably destroy your knife so get the welder ready.
