When I was in Oman,I used to go to a Pakistani restaurant regularly.They make best parattas and chai.Every friday they serves a special biriyani with fried chicken leg piece on the top.Very delicious 👌
The chaiwala has such a calm demeanor and voice. I could listen to him talk about tea all day. And that chai looks absolutely amazing! They make the best chai that you can't replicate anywhere else!

((total side note, but I was in Quetta 10 days ago and had planned to go to a local "hotel" dhaba style restaurant to do this -- Gobar Hotel was recommended to me -- but there were protests and sit-ins and I was stuck at the 5-star hotel in town. I asked and they kindly agreed to show me how to make chai but ... it wasn't the same, didn't taste even half as good as it does from a chaiwalla or amazing dhaba)). They usually buy local tea, not some brand (tapal,lipton etc) and they are much stronger in taste and aroma.. u can buy that from karachi empress market saddar
In Pakistan we use Water Buffalo's milk and not cow's milk. Buffalo's milk has higher fat content and smoother creamer taste. Whereas cow's milk has a stronger gamey flavor and slightly yellowish color. May be the secret is in the milk and not so much in the type of tea leaves !!
