  • Banitsa is a type of börek (pie) that is traditionally made in Bulgaria. But it is actually much more than that! It is one of the essential elements in Bulgarian food culture. Rumors has it that almost every house has its own style of making banitsa. It left a great impression on me with its softness and the beautiful aroma of butter. Layer after layer covered with a delicate mixture of yoghurt, eggs and white cheese. We send our love and thanks to our friend Midia, who introduced us to this tasty masterpiece of a food!

    Quite nice recipe! Only one objection - never cut inside the tray ( tava ) - it will destroy its coating, if any, and also blunt your knife.
    It's only acceptable to draw a knife in the tray if it's plain steel or aluminum with no coating.
    You seem to be quite a good team in the kitchen...
