INSTANT POT SHRIMP SPAGHETTI CARBONARA

  • Easy to make Instant Pot shrimp spaghetti carbonara. It only takes one minute to cook the frozen shrimp and just six minutes for the spaghetti. Both are tossed in butter and coated in an easy to make carbonara sauce and garnished with pecorino cheese and black black pepper.
    Shopping List:
    Servings: 3-4
    FOR THE SHRIMP:
    (1) 12 oz. package extra large raw size frozen shrimp 16-22 per lb. (peeled, de-veined, tail on)
    NOTE: You could also use smaller sized shrimp if you like. Just increase the amount.
    1/2 cup hot water
    Old Bay Seasoning
    Spritz of lemon juice
    FOR THE SPAGHETTI AND SAUCE:
    2 quarter size bunches thick spaghetti
    4 cups cool water
    1 tbsp. fresh peppercorns, grounded fine and sifted
    3 egg yolks plus 1 whole egg
    1/2 cup pecorino cheese , grated fine then sifted
    2 tsp. kosher salt for pasta water
    Sprinkle of pecorino cheese
    3-4 tbsp. salted butter
    Parsley for garnish
    Directions for shrimp::
    Warm the water in the microwave then add to the pot.
    Place a steamer basket in the pot and add the raw frozen shrimp.
    Replace the lid making sure the pressure valve/switch is set to "seal".
    Press the pressure cook/manual button and select "high pressure". Adjust cook time to 1 minute then press the start button. NOTE: If you're using frozen cooked shrimp, set the time to 0.
    When the cooking is done, immediately do a quick release. Move the pressure valve/switch to vent and wait for the pin to drop before removing the lid.
    Carefully remove the lid being mindful of the hot steam.
    Season the shrimp with Old Bay then place the shrimp in a container covered by foil to keep warm while you cook the spaghetti.
    Press the cancel button on the Instant Pot.
    Directions for spaghetti and sauce:
    In a bowl, pour the pecorino cheese into a fine strainer over a bowl. Press the cheese into the strainer to finely grate it into the bowl. You want the cheese to be like powder as this will prevent clumping once added the hot pasta.
    In a bowl, add the eggs and beat. Add 1/2 the cheese and a pinch of black pepper. Mix until smooth. Set aside.
    Add the spaghetti in the Instant Pot, break it in half and cover with the cool water and the salt. Close the lid making sure the valve/switch is set to the seal position. Press the pressure cook button making sure it is set to high pressure. Adjust cook time to 6 minutes. Press start. When done, do a quick release by moving the valve/switch to the vent position and allow all pressure to release before removing the lid. Do not strain or rinse the spaghetti.
    Melt the butter in a skillet over medium heat. Once melted turn off the heat so you don't scramble the eggs when added.
    Add the shrimp to the butter and toss to coat.
    Use tongs to remove spaghetti from the pot and into the skillet with the shrimp and melted butter.
    Take about a ladle of the pasta water and add to skillet.
    Add the egg mixture and toss vigorously until the sauce thickens, adding a little pasta water as needed to further thicken the sauce.
    Give it a spritz of lemon juice and toss.
    Plate and top with more pecorino cheese and black pepper.

    Richard , great recipe & I also like fettuccine Alfredo with shrimp, I have seen several food network chefs & found that the larger of any crustacean the more flavor so I buy jumbo size, wild caught , no farm raised = no flavor , I actually prayed for you earlier this morning , now I have to get my PSA checked due to swelling , I hate that way they test you for swelling , and you know what I mean , pray for me as I go in September for the blood work.

      Thanks and I will. Thank goodness I'm finished with the finger test. LOL. My first PSA is September 3. I'm already anxious about it.

      Once you get the results back, if you have any questions just ask. I am well versed on all of prostate issues. I've researched it for 30 years. Not much I don't know about it.
