The anime mouth thing is a perfect example of the problem of people copying style over substance. Anime mouths are drawn that way intentionally to save time because they can keep the head as a single drawn frame and then only have to animate the mouth, not the jaw line as well. It saves on the amount of drawing they have to do which is essential for what they’re doing but not super useful for people wanting to copy the anime style who don’t know the intention behind what they’re seeing.
Glad to see someone understand the intention and reason behind that. You will sometimes see anime that have fully facial feature on side view of a head when they want to convey the important of a scene. That one from K-On was for cost and time saving, but people just copied it mindlessly and then claim anime look dumb.
Man, I absolutely hate it when people copy the “anime art-style” of making everyone’s chin pointy as heck. The worst part is when these type of people ask for feedback and you point out the chin and they go “No actually, it’s the aRtStyLe”.
It's probably a lot easier to forgive something that's entirely unrealistic like a mouth misaligned with the entire head than be bombarded by something being wrong and not being able to tell exactly what. Jaw movement, plus mouth movement, skin stretching so on.

From watching this I have found that I actually use all of these tips already, I think that the head is my strongest point as a draw a lot of them, If I’m drawing a full pose, it’ll include a head, if I’m drawing just the head and shoulders, there’ll be a head! I’m definitely not perfect and need to work on my art outside figure drawing especially with outdoor backgrounds but this just gave me a little boost of serotonin. (I use the loomis method for anyone who wanted to know)

3:50 oh youre so right, I hate that perspective in some animes sooo much, that they put the mouth on the side and that the eyes really flat, it looks so dumb.

One of the things I still struggle with is when the jaw is opened, which has a curve, but still jarring when I do it for expressions
