- Shabu and I were up before the rest of the family today, which means that we get to share a quick breakfast quesadilla. I don't know where my snacking and quick-meal life would be without flour tortillas and a cheese grater, but I'd certainly be thinner.
By the way, I started a Patreon account. Currently 100% of the money will go towards feeding needy families in my community, here in San Mateo. Lots of kids are out of school and parents are out of work, which means lots of families are going to be hurting. I'll be preparing and distributing free meals from my restaurant to help try and ease this burden.

@@DamnWow I'm a big fan of Secret Aardvark habanero. It's not burn your mouth off hot but it has a nice heat and sweetness to it. If I remember correctly, Kenji used it in his grilled cheese vid

You could just watch some of the Hot Ones videos on the First We Feast channel. They always use a lot of quality hot sauces with a wide range of heat levels.

RIP Shabu, you were the best. This is the first of Kenji's videos I watched during lockdown, and I so looked forward to them at a time when closed restaurants meant that we were only eating what we cooked. It has been 2.5 years since then, and while most of us are now "used to" Kenji putting out so many great videos, I just want to say thank you for helping so many of us get through it.
I enjoy how this is straight to the point, no instructions and just cooking in the kitchen without the fancy camera angles.
While everyone was hoarding toilet paper and hand sanitizer, this man has been grabbing all the tortillas.
And hot sauces. That will last him till next year lmao

Could be cooking for multiple people. Also, there's a pandemic, so kitchens are probably more well stocked than usual. I saw lots of cured meats and cheeses and other stuff that lasts a while
@@yungzed I cook for a living, and that only increases the likelihood of me not usually being stocked up, since most of my diet consists of what I can eat on the go at work. With my current lack of work, I am far more stocked up than I normally would be. If my fridge normally looked like that, it would all end up in there trash. Of course Kenji has a wife and kid, and very possibly a far more active social life than I have.

As someone whos family was part of the founding creameries for the Tillamook County Creamery Association, I cannot put into words how much I love to see you use Tillamook Cheddar. We always we our cheese was the best, it's just nice to see chefs like you confirm that.

I just made this today -- I think what gets me about it is the process. It's just sort of a little perfect piece of cooking poetry. The amount of bacon fat left is *just enough* to flavor the eggs and keep them sliding around in the pan. Why does the flip work so well? Because the cheese is added on top of the eggs when they've cooked a little, so a little press on the tortilla adheres to the melting cheese, and the whole thing flips over effortlessly. Then there's *just enough* bacon fat still at the bottom to crisp up the tortilla after it's folded. I mean, the dish is delicious, but going through the process of making it was such a pleasure. Thanks very much for sharing it!
And for feeding you community in this time of need, you're doing a great deed.
These videos kind of feel like getting a backstage pass to a chef's creative process. It's also refreshing to see him whip up delights in an average-sized kitchen. Helps to know that great meals can be made without all the fancy mixers/equipment/long-range griddles, etc.

I love how chill you are about not making that quesadilla overly perfect. Throw the ingredients in the pan, stir, cook, put the quesadilla down, flip, scrape the egg off the pan and put into the quesadilla, fold and eat.

I have made this recipe probably hundreds of times, and I've finally nailed down a more consistent method - steaming.
The egg flip is fraught with difficulties. Some egg can get stuck, and you can sometimes get oil dripping out of the pan. Also by cooking the egg on one side, and applying that cooked side to the tortillas it doesn't always join with it very well.
Instead, I like to steam it. In a dry pan, on really low gentle heat, add few drops of water, then the tortilla, then the beaten egg. Cover with a tight-fitting lid, and patiently wait. The egg will steam, cooking from the bottom and reheating the tortilla. Patience is the key here, you can easily burn the tortilla - but with a low heat the egg will cook without any risk of burning. Then take off the lid, grate on your cheese, add any extra toppings (I really like something pickled, like picked onions or jalapenos), fold it. Add a bit of olive oil to the pan, increase the heat and sizzle the outside. By the time it's nicely coloured the cheese will have melted.
I feel like my overall success rate is way higher with this, and you get a much more structurally sound quesadilla, which is less likely to delaminate when cut into triangles. And who tf wants delamination in the morning.

The fork on the pan is soul crushing
-Get two tortillas
-Break up a square of swiss cheese into pieces
-Break up a square of cheddar cheese into pieces
-Put the cheese on one tortilla, spread it out evenly
-Add two packs of mild taco bell hotsauce to the same tortilla
-Put the other tortilla on top of the one with cheese and hotsauce on it
-Stove on Medium heat
-A generous amount of olive oil in a pan
-Pan on the stove
-Quesadilla in the pan
-Wait for the first side to turn golden-colored and crispy
-Flip the Quesadilla
-Add a little more olive oil
-Wait for the second side to turn golden-colored and crispy
-Take the Quesadilla off of the pan and put it on a cutting board
-Cut the Quesadilla into eighths
-Put the cut Quesadilla on a large plate with Sour Cream and, optionally, guacamole
This is my depressing quesadilla recipe that I make around 3-4 times a week at 11 pm when I’m hungry
If you’re very hungry with nothing else to make though, it lowkey slaps
Sometimes I also add Velvedda, its optional though
