I suggest to add your spices after the skimming that way your flavor isn’t being discarded with the foam. No need to get offended.

Hi Lilah. I was looking for someone to help me cook Puerto Rican food and thank God I found your channel. My wife was the one who always cooked and my mistake was I never watched. Anyway after she passed away I had to learn how make more than just white rice. I now can cook for my son and me. Thanks for being so funny and real. I hope I can find a nice lady like you. In culinary school we called that foam scum you just skim it off like you did in the video. It comes from the meat as it cooks. It makes a cleaner soup or stock.
