I've seen articles talking about rice losing 10-12% of the available starch calories if it is refrigerated for at least 12 hours. Do a search on "resistant starch" and I suspect you will find a long list of answers, some of which might even be true. 😁 That meal looks amazing! To me, there is no aroma more appealing than peppers and onions frying and, adding mushrooms is the trifecta. I would put that smell in a cologne. Go Vols!
Looks good. Seems most restaurants here on the west coast put a layer of Monterey Jack cheese on top of the rice first and by the time it arrives to the table, it's all melty. I'm going to give this a try as it too is one of my favorites to order when dining out.

Just try it out yourself and see how you feel honestly. worst case scenario you just eat that leftover rice lol.

Apparently the cooling process makes it a more resistant starch so the body does not absorb as easily, but nothing I saw put a number on it as to how much of a reduction in carbs to expect.
The first thing to do is wash your rice, which will drop the caloric content by 25% as well as help it to not clump. Supposedly, rice becomes 50% less calorific by boiling it with coconut oil and refrigerating a day.

James. “Cooling for 12 hours will lead to formation of hydrogen bonds between the amylose molecules outside the rice grains which also turns it into a resistant starch.” - - - from an article I read. You are thinking of resistant starch... cold cooked rice doesn't get digested in the small intestine. If you heat it back up i think it doesn't count. But Google it and see what you think.
