    Great safety tip! My brother is a Desert Storm Veteran, Marine Corp. Since this war was an air war, my brother did not physically see any actual combat. He did sustain a wound during this war and it was he cut his hand cutting open an Avocado just like you stated. Love your videos! Keep them coming!

    I've seen articles talking about rice losing 10-12% of the available starch calories if it is refrigerated for at least 12 hours. Do a search on "resistant starch" and I suspect you will find a long list of answers, some of which might even be true. 😁 That meal looks amazing! To me, there is no aroma more appealing than peppers and onions frying and, adding mushrooms is the trifecta. I would put that smell in a cologne. Go Vols!

    Looks good. Seems most restaurants here on the west coast put a layer of Monterey Jack cheese on top of the rice first and by the time it arrives to the table, it's all melty. I'm going to give this a try as it too is one of my favorites to order when dining out.

      It came out awesome. My wife doesn't like spicy, so I left out jalapeños, but added a pound of mushrooms. It was a huge hit. Thanks for the inspiration.

    the intro argument was funny. it's always like that, once person says it as it's spelled and hte other knows the actual way to say it lol.
    this recipe is smokin hot and looks nice. it's as if you took home made stuff and turned it into a restaurant dish.
    best video of the month imo, so much fun and creativity and that back n forth with the host/crew member is funny as hell.
    okay. ON THE RICE TOPIC. idk how it works, but when I'd have left over rice in the fridge for 24+ hours and eat it outta my pot/bowl and be lazy with it, it always used to feel like I'd get no energy outta those carbs even if I just had chicken. So potentially might be true that way, since freshly cooked rice hits different than stale rice that's been in the fridge for more than a day. Just try it out yourself and see how you feel honestly. worst case scenario you just eat that leftover rice lol.

    That avocado seed thing is no joke. I got into the tendon on the side of my left pointer finger doing the same thing. finger has not been the same in the le last 15 years.

      I wish more people would see the dangers...its one of the very few times that a chef willa actually cut towards themselves...I have never understood it...we are always taught to keep blade away while chopping and so on...even graded on it..but when it comes to avocado.....sorry to hear...i Definitely understand

    That is something I order frequently, but at our local place they just call it nachos no chips with or without veggies and your choice of protein. I did a little research on the reheated rice theory and from the 3 or 4 articles I read there is some truth to it. Apparently the cooling process makes it a more resistant starch so the body does not absorb as easily, but nothing I saw put a number on it as to how much of a reduction in carbs to expect.

    The first thing to do is wash your rice, which will drop the caloric content by 25% as well as help it to not clump. Supposedly, rice becomes 50% less calorific by boiling it with coconut oil and refrigerating a day.

      “The cooling is essential because amylose, the soluble part of the starch, leaves the granules during gelatinization,” said research team leader Sudhair A. James. “Cooling for 12 hours will lead to formation of hydrogen bonds between the amylose molecules outside the rice grains which also turns it into a resistant starch.” - - - from an article I read. I'm diabetic and refrigerating rice is a big deal for me to be able to enjoy rice!

    I don’t know about rice but potatoes that are allowed to cool and then are recooked like homefries makes the starch less absorbable, or more accurately it doesn’t trigger as much of an insulin response.

    You are thinking of resistant starch... cold cooked rice doesn't get digested in the small intestine. If you heat it back up i think it doesn't count. But Google it and see what you think.

    Does rice have less carbs after being refrigerated?
    Yes. There are fewer carbs and more resistant starch in cold rice than in hot rice. With the same amount of rice, you will absorb less sugar but more fiber in your meal, which are two things that weight-loss food needs. Therefore, cold rice is very good for losing weight.Jun 27, 2022

    And you picked two fairly complicated words to pronounce. Two LL's together (pollo) make a "Y" sound. And two RR's together (arroz), you need to roll them. You butchered the language but nailed the dish
