    Perfect! No need to boil the sweet condensed milk can in a boiling water for 2 hours. This is short and easy and sooooo yummy. Once again thank you Di.

    Hey, do u know why when I took pot off the heat and I pour the heavy cream in, the Carmel got all clump on the whisk...I didn't stir or touch it while it was on the stove?

    I just made this, it tastes great. A little thin, but like I said I just made it so it might have to wait like you mentioned. I put in a mason jar, my question is how do you store this, in the refrigerator or leave it in a cool dark area?

      Tropic Lush You should refrigerate it. When you want to use it, either spoon some in a small pot or microwave safe bowl and heat or just put the whole jar into the microwave. I've kept it refrigerated for a couple of weeks, but it usually get used before that. Thanks for watching and for the comment! Diane ;)

    Hi Di, would this topping be okay on top of your New York Baked Cheesecake recipe, or could it be stirred into the cheesecake somehow?

      You could try and use it as a caramel topping, although I haven't tried it yet. I'm not sure about stirring it in into the batter though. It could alter the texture and I'm not sure it would be worth the risk, because this cheesecake is so wonderful when done properly. Good luck and let me know how it turns out! Thank you for watching!     Hi Di! Can you please help me out. I have the problem with the caramel sauce. Each time, no matter what I stir in the butter or the cream first, it always separates at the end with the darker liquid on the bottom and the butter collects on top and is grainy in addition. Why is this so, as I think this recipe is pretty easy.

      There are many reasons this can occur, so I don't know where to begin. You can Google "why does butter separate when cooking caramel" to get an idea of what happened in your situation. Good luck and thank you for watching! Diane

    I stood an hour in front of my stofe with no change..... The heat were on med heat for the whole time. No change in colour. Hou long before change in colour?

      Once the sugar is melted, turn up the heat to medium hi, and stand by and watch carefully. Once it starts to change in color it will do so fast so be prepared to remove from heat and stir in cream being careful because sugar mixture is very hot

      It's that good! I made this specifically for a turtle cheesecake that turned out awesome but we ended up putting this on everything. I also made you're lemon blueberry bread, you would be proud.
