    I have a little video on how to make the superfine sugar and using the blender is an option. Take a look at that. I haven't tried it with the cocoa powder, so I'm not sure exactly how much I'd add, but I would adjust the other ingredients as well if I did that, otherwise they'd come out dry and not as sweet. Experiment and see what happens! :)

    I've made large batches and used multiple baking sheets and baked them at the same time. It's still best to leave them in the oven overnight, but you can take them out after about 3-4 hours and then let them sit on the counter uncovered, so they can continue to dry. I'd leave them in the oven as long as possible though. They do last for several days, so instead you could do batches over a few days, if you have time. I hope that helps.     I love meringue i use it for frosting just plain egg white sugar stiffened up and some vanilla with a nice bright food color :D

    You could do a half recipe with one egg white. I've never used a toaster oven for these, so I'm not sure how they would turn out. Maybe the product manufacturer has notes one baking times and temps. It's not going to hold the heat as well as a regular oven, so don't make the cookies too big, which might give them a better chance of cooking and drying properly. Good luck! Di ;)

    That could be an indication that the temp was too high. Oven temps vary, so maybe adjust it next time and lower the temp by 25 degrees. Also be sure not to open the door until they are set; at least 3-4 hours, as that could also cause cracking. I get a little cracking sometimes when I make them too big, but as long as they're set inside, they'll still taste great! Keep trying! The mistakes don't usually taste bad! lol

    I'm not sure about using a sugar substitute. I've never tried that before. If you can't find peppermint extract, look for peppermint oil. It's carried in some grocery stores and health food stores. You could also buy extract or oil online. If you use the oil, use only 1/4 of the amount in the recipe for extract, as the oil is much stronger.

    Flattening can be caused by beating the egg whites to quickly, causing large air bubbles, which burst. Check list: NO yolk in the whites, eggs at room temp, super clean utensils (wipe with vinegar or lemon juice if you want to be sure-even the spatula), no plastic bowls, don't mix too quickly, add the sugar slowly, beat until stiff peaks, fold chip in carefully. Follow the video and the recipe. Do all of that and it should be fine. Trial and error! Good luck! :)

    I'm not sure I understand. First: did you add food coloring? They're not doughy at all, but very light and fluffy. I don't know what you mean by "compact" either. Maybe you can give me more details.

    I've never used it for my meringue cookies, but they may come out a bit dry. I think regular granulated sugar would be better.

      You can't make meringue by using powder... It might turn out hard.

    I need to know more about what didn't work. The egg whites must be at room temperature and all utensils involved in beating them must be free of any residue. Let me know the details. I just made them for Easter (posted on my Facebook page) and they turned out perfect, so let's find out what happened, so you can get these babies into your mouth! :)

      I've stored them in zip-lock plastic bags and also in cookie tins separated by parchment paper for a few weeks. They stay surprisingly crisp and fresh. I'm always be asked to make them.       leen seder Oil should be fine, but I haven't tested recipes with it, so can't be certain of the exact amount. Oil can be a bit strong, so use less than the amount of extract stated for this recipe. I hope that helps! Thanks for watching! Diane

      I would advise making a smaller batch, as the meringue batter really should be used right away. ;)

      thank you :) and so sorry to bother, but i have one more problem: my meringue starts to turn golden after 10 mins in the oven at 100oC. i turned it off then on the rest of the time, but the meringue still burns TT.TT
      should i turn the oven on for 5 min, them off for 5 min until the meringue is finished?
