Pyrography Vs Scorch - which is BETTER?

In this video, I look at my favourite pyrography kit, and pit it against Scorch pens and paste. What do they both do, how do they work and what are good for? And of course the big question, which is best!

My thoughts would be for shading with pen you'd have to use a stipple or cross hatching method. Reminded me of art class and black ink was the same color but that's how we were told to shade.
