So like, I'm as far from being irish as one can be (my mother is irish by blood, but my grandma moved her before she was born) but my favourite thing was breakfast at her place. It was always bacon, eggs, soda bread, and my all time favourite was her potato bread (wasnt quite an ulster fry but it was damn good). I LOVE potato bread, especially when she fries them up in a little bacon fat. She was a master of the fried egg. A few years back, she took me to Ireland to meet my cousins and we toured northern ireland, and none of the potato bread was quite as good as her homemade stuff as most places used store bought stuff because of the effort it required. But seeing that soda bread made me want soda bread more than I ever have before, I'll have to crack open the recipe cards I got from my grandma and make these again
