My husband is allergic to mango so I’ll use papaya or even cantaloupe. I’m sure it will work out beautifully.
Peaches or pineapple or even strawberries would work beautifully

Would make a great cheesecake filling as well especially if you use half condensed milk and half mascarpone cheese. Not so sweet and ideal as a desert on a hot day. In fact I think I'll try it this weekend.
