Starting a chrysler 360 motor with no choke

I wanted to see if edelbrock performer carburetors can actually be started without the choke. Here's the result.

Why with no choke are you not pumping as you crank? I’m all over that pedal as I am cranking over my 79 318, 2bbl…..??
