- I hope age does something for this wine, otherwise, this whole batch will just end up being a waste of ingredients. This is my third batch of wine, the other 2 are delicious, I'm just not sure what I did wrong here.

Love your honesty. As a newbie winemaker I can relate to everything you have articulated, I made a peach wine that tasted lovely at bottling but when I opened a bottle a few months later it was ick😝. All part of the journey and everything is a valuable lesson to make us better, more knowledgeable winemakers 🤷♀
I'm glad you enjoyed, welcome to the channel. I was actually just thinking about this wine wondering if the taste is better or if it's just going to be drain cleaner. I'll have to make a tasting video in the next while and update. I've heard they can really change with age.
You could also try blending it with a new batch, without any added tannin/acid. I was able to transform a bad cherry wine this way.
I was thinking vinegar might be an option if time doesn't age it out. I haven't thrown it away. We will see what 3 months does, I'll post a video about it when I try it again.
Maybe if it doesn't mellow out you can salvage it for a nice fruity vinegar
