Ottolenghi's recipes in The Guardian helped me through pandemic shutdown. Easy and simple everyday food, but always with a creative twist, absolutely love them. 8 hour nightshifts watching over an empty hotel, a fully equipped industrial kitchen, what better time to deep dive in funky fusion comfort food.
Hell yeah, got any links to his books? I just can't remember that name for the life of me so I was just curious. I always need help simplifying my cooking experience 😂👍

Glad for you. I've never seen a recipe from him that didn't require about 10 ingredients I've never heard about. And I'm somewhat familiar ingredients from many places on the planet.

I was curious what ingredients/recipes could be as out there as you described, so I skimmed through about ten of his recipes, including foreign dishes that I have never heard of before. Only found 1 ingredient that I have never heard of, and his recipes only had 10-15 ingredients total, so you must be exaggerating. Unless he's made a massive change in his style?

to me, the philosophy of cooking is doing something necessary, but to a degree that it shows that you love what you're cooking and who you're cooking it for.
I read Yotam's columns and he always struck me as geeky, really geeky. Nice to see a different side of him here.

It's a variation on Israeli chicken schnitzel with (as he said) cheese instead of egg. It is better and much easier to eat in a pita.

While searching for banana peppers, I happened upon pepperoncino's. After 50 years of consuming pizza, I found a new favorite topping.
I love Stephen Colbert...except when he has a cooking segment. One chef commented after a bit on the show, that it's like working with a toddler! I see what he means!
Yeah it was pretty okay but like, damn he was constantly moving ahead and wouldn't stfu!

Don't forget the DISCOMFORT of a few hour later, in a small room with unfortunately good acoustics.

He needs to get back to his roots and become a more independent brand again like when he published the masterpiece Jerusalem. His "test kitchen" has ruined his name. This book was not good. What was comfort food about this? And recipes were not nearly as good as in the past. Now he has a bunch of people cranking out ottolenghi-approved recipes too fast. Same old quantity over quality problem that always happens as brands try to get bigger
Finding comfort in shopping, preparing, and eating is a sign of psychological problems.
Eat for sustenance and moderate gustatory pleasure.
Get counselling and stop hiding behind your stomach.

Sometimes I think about the fact that we eat to survive and really just need the nutrients and calories but his ethos is sign of a considerate nurturer. We eat every day of our lives and the food we eat is embedded in our cultures, part of our social fabric. Choking down fast food with no consideration has caused morbid obesity to skyrocket, so we do need to consider our outlook and make preparing our meals a considered enjoyable experience.
