    Home canned green beans are sooooo much better than commercial canned! Commercial tastes like the can.

      Is it the actual metal can the problem. I think mostly all canned goods tastes ‘canned’ or ‘metallic’. Glass canning would be better right? I love adding garlic butter to green beans when hot and ready to eat.

    Saw from a Mennonite lady that if you add 50-100 mg zinc that the green stays green and do not discolor. The difference is amazing.

    I make beans tossed with olive oil, vinegar, garlic, parsley so delicious, even better if cubed boiled potatoes added to that mixture :)

    I just found your channel yesterday and used my pressure canner for the first time today... now I REALLY want to do green beans... I have them growing in the garden, but not enough.     I’ve always loved green beans. Since moving to the south I love them even more. Restaurants all serve them over cooked (soft) with bacon and onions. Yum !

    I grew pole beans and bush beans and didn't end up with enough to really do anything with. It's been a strange year for green beans.

      I bought about 20- or 30 boxes(- dozen) of them after Christmas I was hoping to get a discount for buying so many at one time, no luck and am still using them, hope you have a great time and success in your canning project

    My sweet Molly (Black Lab) God rest her soul, would be at my feet when I cut up cucumbers. She LOVED the skins. Would wake up from a deep sleep from the other room. I miss her every day😭

      Sorry she’s not still with you, I have dogs I miss a lot as well, one just went to heaven last month, I miss feeding her, and having her sleep by me, they will be waiting for me in heaven for when I get there. Running and chasing things and digging holes in heaven to be sure🤗😢🐶

    Two things, if I may, and even if not here goes:
    1. While a roasted or sauteed green bean is delightful, my favorite is how my grandma made them. Snap the beans, then cook in water full of bacon grease for 2hrs. Eat with cornbread
    2. I got that little knife sharpener gimmick you mentioned couple of weeks ago and she is saving my bacon! Couldn't bring to my guy during the quarantine and it was a struggle. No more struggle!
    Will still take them for proper sharpening when it's safe for him but in the meantime? Thank you so much for this little savior 💖

    In bean season I have been known to steam/boil until just soft an entire plate of beans and have that for supper. Black pepper and a little butter. once the beans are done I do the same with the corn.

    I like them cooked with potatoes and a little bacon grease added for flavor. I also like them steamed with just a little salt and some butter. Those are just two of the ways I like them..

    First time green bean canner and have been checking out videos online. One gal (I did google it after) put a zinc tablet in each jar to help the beans hold the chlorophyll staying nice and green. Wondering why so many other channels aren't doing the same thing, have you tried it? I prefer my beans with a bit of crunch too but in pantry stocking, I need veggies so will try beans, then carrots. I expect I won't really like them but for soups, I'm sure they will be great.

    I canned green beans on Monday. As I was filling each jar, I would put some in the jar and pick up the jar and give it a good shake. It seemed to help jam and cram the beans in the jar. Also, newbie mistake: Don't can frozen green beans they turn out mushy. You and I have the same stove

    Well, I'm Southern so if there is any crunch to our veggies then they ain't done. I like to stew fry mine in a cast iron frying pan. A little water, a little olive oil, a smidge of butter, garlic, salt and some pepper. Thank you

    Question: Leisa, please tell me how to can raw meat in half-pint jars. Also, how much water do I put in my canner for half-pints? I can't find the answer anywhere! I've been canning meat in pint jars, but, since I'm Diabetic, I also need to have smaller amounts to grab when needed. Hope you can help! Thanks so much for your great videos!

    I don’t recall you saying anything about sterilizing the jars and lids in your process. You must do this before canning. Also you need to thoughtfully wash and clean them.

    I sometimes will toss in a piece of peeled lemon skin in mine. Sometimes I’ll put in a mint leaf. I have to tell you, I tried the Orchard Road lids for the first time. Talk about pop! I thought the jars cracked and ran into the kitchen and then heard one pop. Duh! Oh, I have a question. I need 12 lbs of pressure and I use a gauge canner with an adjustable jiggler, 5,10,15. Should I use the 15 pound weight and let it jiggle, or should I use the 10 pound weight and let the gauge get up to 12 pounds, and keep an eye on the pot? I like being able to hear the jiggler moving. Your thoughts?

      The jiggler makes the guage obsolete. When above 1000 ft you can for 15lbs of pressure with the jiggler.

      Call each hardware store in your town-city, and ask them if they have any or can they order any for you, and then call the dollar type of stores as well asking them if they have any, sometimes grocery stores could have them? Also WalMart carry’s them if not, see if you can order them from WalMart online, the people at the store will help you if you need help ordering online, they helped me when I ordered some jars a Few months ago. Good luck, and then there’s the online ordering as well.

      Green beans were cold, but the water I added was warm and the water in the canner was warm.

    Can you put in a piece or garlic? Not a whole clove, just a piece of it? Or is dried garlic powdered better? Onion soup mix sounds great to put in, like a 1/2 a teaspoon? Thanks

      in the right conditions they can last upwards of 5 years, though they will lose nutritional value.

    I’m new to pressure canning green beans. When beans are raw packed are they soft enough to just simply heat when you use them or do the require boiling a few minutes? I enjoy your videos!

    Do you boil the water or it’s it hot tap water? Also the water in the canner is almost boiling when you add the jars?

      I heat it up on the stove, not necessarily boiling.

      Like Lesia said, almost boiling when putting the liquid in the jars. It is easy when you have to handle them. But you want them hot so that when you put them into your canner they will not break. By having hot water in your canner to start will make the time of canning under pressure faster. You always want hot with hot - cold with cold, If you put a cold jar in hot water the jar may break and you will lose your product and be left with a mess to clean. I hope this helps. :-)

    I pressure canned 15 pints of green beans and a batch of 7 quarts...my question is when I can outside on my camp chef its harder to regulate the heat. It wants to go to approx 13lbs of pressure and stay there. My elevation requires 11lbs. Is this okay to stay consistently above that?

      Same as any other, in 8-12 hours, check to see if they are sealed.

    I know you are an ingredient canner, but do you know if it is possible to can southern style green beans that have bacon, onions and small red potatoes? That is the only way that I like green beans.

    I am confused when we put the lid on to bring the pressure to 11 pounds For 20 minutes then we watch for the study stream and once you get the city stream it’s only 10 minutes can you explain a little bit more please

      As far as I know it doesn't matter what the jar size is You only need to purge air out of the counter for 10 minutes. The difference in time is cook time after that but I'm just doing 25 minutes in pints with green and yellow beans. I haven't done them in larger jars yet but I probably wouldn't change the cook time by a whole lot more than 10 minutes if I did..

    Leisa, I've heard that word several times now in pressure canning but have yet to know what it means. The word? Siphoning. What does that actually mean when you are doing this? What am I to look for?

      Siphoning is when liquid is drawn out of the jar by a rapid change in temperature and air pressure. It seems to occur more frequently in canning fruits like apple sauce and peaches in syrup but we've also experienced siphoning in soups and stewed tomatoes done in the pressure canner

      The water in the canner will have some of the liquid contents of your jars and the water floating in the canner sometimes is colored by the water- broth that what was in the jars, and sometimes will color the fluid in the canner. It will stick to the outside of your mason jars that were just canned, the jars will have some of the fluid on them, that need to be washed off after they have cooled off. Good luck we hope you don’t have any siphoning

    I have a question about Golden Harvest canning lids. Has anyone here used them? Do they seal well and stay sealed? Any information would be appreciated.

      @@SuttonsDaze Thank you! I'm having a Suttons Daze marathon! The Golden Harvest regular lids are $1.75 over here in So. California. So I wanted to get a bunch but wasn't sure even though they are made by the people who make Ball & Kerr. Thanks again.

    is it necessary to boil the beans for about 15 minutes when heating up a jar of canned?

      Not if properly canned

    You mentioned siphoning..I think..is that bad if it happens?

      It 's not the end of the world, but it happens and can impact the seal on your jars. Siphoning is when liquid is drawn out of the jar by a rapid change in temperature and air pressure. It seems to occur more frequently in canning fruits like apple sauce and peaches in syrup but we've also experienced siphoning in soups and stewed tomatoes done in the pressure canner.

    Can you freeze green beans to can a bigger batch later or does that change them?

      There is no safety issue in canning food that was previously frozen. ... The quality issues are that the food could be undesirable texture-wise - for instance, green beans that were blanched for freezing, then frozen, then thawed, then canned will be super soft, and unacceptable in quality to most people.

    I really like French string green beans and I know you can buy a tool to do this. Has anyone tried this? Easy or hard? Thankyou for any information guys:)

      K Anderson Lumnah Acres just used a food processor and put the green beans in sideways in the chute...

    No crunchy green beans! I grew up with a mother who have cooked all the vegetables everything was still crunchy or crisp! I don't mind them in Chinese food but I like my vegetables cooked all the way and that may come from living overseas because everybody oversees no matter where I went Cooks there vegetables to death but they use the liquid they were cooked in as well so you don't lose nutrients.
