Pressure Canning Green Beans in the Presto Digital Canner
HTML-код
- Опубликовано: 24 июл 2024
- We tested the Presto Digital Canner using a scientific data logger to record the temperature of the green beans in the jars during processing. The goal was to see if this canner kept the food in the "kill zone" long enough to kill any botulism spores that might be present. The green beans were canned using the USDA pressure canning guidelines and we share the results of the test.

Presto should be paying you for all the detailed research you've done. Amazing.
I was just thinking the same thing! They really need to hire you Pam! Thank you for all your hard work!
Yes!
Exactly. They should be sponsoring her. Perhaps they don’t know Pam makes these videos. This particular data logger company should be too.
( I’ve been searching for one-and can’t find in Canada)
They’d both make a few more bucks if there was a link to their products in the description of Pam’s videos. Affiliate links. It’s hard work making videos and there is some expense at times I’m sure; and this would help her out a bit expense wise/ to make more videos, as well. ‘Time is money’
I think there was one video where the presto did NOT meet the standards though. I can’t remember which.
@@JaniceCrowell I think it was more the recipe. It was a tomato sauce recipe I believe. Pam said it was probably too thick
Your work is so important. Thank you for taking the time to run these tests!
You are very welcome. I appreciate that.
Thank you Pam, it’s always so interesting when you do the testing on different foods.
Thank you! I quite enjoy that--data is my thing!
I’ve been watching your videos for awhile and I’m coming out of the woodwork to say “I love your channel Pam”. 🌼
Valuable information here.
I like when you share the scientific data behind the process, it’s up my alley.
Thanks for all you do.
Awesome! Thank you so much! We are happy that you have been watching our videos!
Thank you for doing this show. I have this canner and I love it, but I don't have the equipment to test it. You've given me more confidence in what I have canned!
You are so welcome! I am glad the video has helped.
I got this canner and I absolutely LOVE IT!!! I tried the regular one on the stove and I couldn’t get the hang of it at all. I seen this one and the instructions were sooooo easy! My 1st project was canning hamburger meat and all of the jars sealed!😊 I can’t wait to try this too! Please keep doing these videos!💕💕💕💕
Thank you so much! I just received my new Presto electric canner. Looking so forward to more videos using the Presto.
Your video was so helpful. I had purchased the Presto canner and was not confident enough to use it for 2 years.
I got it out and watched your video multiple times and went for it.
And happy to say thats it wasn't t as difficult as I had imagined.
And now I'm pressure canning my green beans.
Thanks again for such a great video , was so helpful!!!
An awesome presentation! You've sold me on this technology. I struggled as a teenager and young adult with pressure cookers (back in the 60s/70s), so I haven't been motivated to repeat the experience with canners. But this device takes most of the work out of your hands. There's no whispered prayers that the thing won't blow up. Thank you.
I really wasn't intending to sell you on anything--just reporting my data. This canner failed to get meat sauce up into the safety zone so if you do purchase it, be aware of pressure canning thicker foods. Thanks for sharing your comments.
Excellent demo and perfect timing, cause I'm canning my green beans tomorrow!
Excellent!
That was the best presentation I've ever seen in 20 years watching this stuff
Thank you for all of this wonderful research. I bought the Presto Digital canner because I am not physically able to handle a large canner. After I bought it, I started hearing it was not safe and I became afraid to use it. Thank you so much for providing scientific testing to the Presto.
You are welcome. I do think it is safe for most foods, but not for thick foods like meat sauce.
I’m always excited to see new videos! Love how you explain things so even the “layman” can understand. Thank you 😊
You are so welcome!
I enjoy watching all the Presto Digital research you are doing. I presently don't have a pressure canner because I have a glass top stove, and am afraid of breaking it. I've broken one already. I hope all your findings will be positive so that I will feel positive about purchasing this canner. Thanks for all your work.
You are welcome. Mine is also a glass top induction stove, so I just set up a canning station outside on our porch.
Unlike many producers, she does not put adds or takes kickbacks for products so she can be neutral in her presentations. That device she uses to measure control is pricy! It’s time intensive and you can help here by Liking and Subcribing the videos !
You summed it up nicely! Thank you.
First, you are amazing! Second, thank you for all this information. I just got my Presto and did raspberry jam today and did the water bath method in it. Worked wonderfully. This was a gift from my husband because I am really getting into this way of food preservation and wanted a pressure canner that was easy for me to work with. I love making my own vegetable broth and needed a way to can it effectively. I have been freezing it and I am running out of space in my freezer. Henceforth, I am going to pressure can it. Green beans are on my radar for sure! Again, thank you for doing this review. I love the science behind how things work.
I appreciate ALL of the detail you put into every video. 👍👍👍👍👍
I appreciate that!
I've not been canning long and was afraid to do anything but water bath. I didn't know there was such a thing as an electric canner! Thank you for this video, I will be saving up to buy one now. I feel more confident about trying it now.
WE are happy that our videos have helped you have the courage to do more canning.
Another great video. And perfect timing. Next week i should be harvesting a bunch of our green beans then i will be canning them. Thanks so much Pam. Cheers
Sounds great! How lovely to have green beans to harvest!
Many thanks to you for showing this testing process. I trusted Presto to have done the proper testing and have LOVED my digital canner, but it's reassuring to actually see the proof. Presto would sell many more digital canners if they would just publish their numbers as you have done. Thanks again.
I agree--I wish they would make their data public.
Could you please tell me where I can purchase one thank you 😊
@@Sheenasalesthriftytreasures Right now they are quite hard to find. Amazon does not have any and that is where I got mine.
I'm so glad your doing these tests on this equipment. I've saved enough $$ to buy one myself for my birthday.
They are very hard to find right now, so don't over pay. Some folks are price-gouging right now.
You are the best! Thank you for all your testing!
You are welcome.
Canned green beans are one of my favorites. Thanks for showing the process in the Presto.
Our pleasure!
All these successful tests, may just convince me to get one of these electric Presto canners. Thanks for the data and the video.
Before you decide wait just a bit. I am going to put out a video in a few days on the changing world of pressure canning that might influence your decision.
@@RoseRedHomestead Good to hear. I need to be able to do quarts but can only do pints in my InstaPot max. So I was thinking about purchasing the Presto for that.
@@RoseRedHomestead I can't wait!
You explained the data so well, I understood why we should not quick release. Thank you
That is great to hear! Thank you.
Thank you Pam ! I have canned 76 qts of green beans ! I 💘 this canner !!
Wow--you have been very busy! Fantastic achievement!
I just found your channel and have been watching all previous videos. I love the no-nonsense information you have. When I got to the apple peel jelly video, it took me back in time to when my mom and grandmom would make jelly the same way. To this day, the only way I make apple jelly is this way. One time Grandma put in a stick of cinnamon. We called it apple pie jelly.
Thank you so much and we are delighted that you found us. Thanks for your story--that is the greatest family memory! Love the idea of a cinnamon stick in the jelly.
Thank you for testing. LOVE the data analysis. Greatly appreciate d 💕
You are so welcome!
You are amazing!!....so glad I found your channel!! How absolutely helpful!
Thank you once again! Your efforts are very much appreciated.
Thank you--that means a lot.
Fascinating video. Thank you for explaining this so well.
Glad you enjoyed it!
I love this new product and all the research you have done to benefit us all. This would be perfect us, with just my husband and I and the volume we would can. My only issue now is finding one. They are sold out on every site that carries them. 😫
I bought an electric water bath canner this year and love using it, so much easier than how I used to water bath--outside in a giant water bath kettle with boiling water splashing all over. I am excited that they now have a safe pressure canner available, thanks for doing this research.
You are welcome.
CeePark it is good to know about the electric water bath canner and you like it. I have been wanting to get one. Would you share what brand you got?
@@hazelbateman2767 It is a Ball Versatile Multi-cooker, but really I will use just as a water bath canner. So much easier than the way I used to do the water bath.
I have a glass top stove so I have been unable to use a traditional canner. I am so glad the Presto works safely (for most things).
Sounds great!
Thank you for sharing. Another excellent video.
Thank you!
I think this machine is convenient for small batches, but if you have a lot to can, I still like the larger traditional pressure canners because you can double stack pint jars. I use my presto electric canner primarily for chicken and dried beans all year long.
Thank you for this. Just finished canning corn and was thinking about green beans, but always concerned about green beans when canning, Will use my presto digital canner to do green beans.
That is great! Enjoy!
Thanks for doing this great test!
Our pleasure! Thanks for watching.
I had no idea one could buy a such data logger and test your own recipes. Fascinating!
Yes, that what we thought.
Thanks. I am really enjoying doing it. I love data !
wow your subscriber finally went up i remember i subscribed on your channel 2 years ago if im not mistaken. by the way thank you for sharing a good staff and make other peole less hassle.
Yes, it has been climbing regularly. Two years ago--wow--you came in at the start! Those were the days when we were getting 30 views a week and thought that was fabulous! Thanks for sticking with us!
Loving the science and method!!
Thank you!
Another wonderful video - thank you!
Glad you enjoyed it! Thank you.
Thank you, Pam, for another great video on the Presto electric canner. I bought a NESCO electric canner before the Presto one came out. I am trying to decide if I want to invest in the Presto.
Ann--I am going to do a video in just a few days on how the world of pressure canning has changed with the advent of these new electric canners. You may want to wait until you view that one and then decide. I think the Presto is a good canner, but it has limitations.
Love your videos with the USDA saftey standards and the sciene behind it. You've increased my confidence in canning greatly. A couple of questions if you don't mind. 1) Have you ever tested or tried the reusable canning lids (tattler)?
2) Have you ever done a video on the shelf life of home canned goods? We just finished off the remainder of raw pack chicken we canned in Dec 2017, no appreciable loss of taste or texture 40 months after being canned. Proper storage in cool dark basement helped I'm sure.
Thanks for your comments. I did try tatler lids and they seem to work fine. I still prefer Ball or Kerr. I have not formally tested shelf life of canned goods, but I have been eating them for over 70 years so I know from experience that most are really good for a couple of years, some are still good after 5 years, and we recently found a pint of chicken I canned in 2011 and it tasted great and we are still alive and well!
Most Important steps:
1 - make sure you imput correct canning time!! There's no going back. Its a start over.
2. - Check power cord every time for good tight fit!
I bought this Canner a couple months ago and just loved it aside from the operator error I did such as not putting in the correct processing time and having to start completely over. Then when I thought I was past the newbie stage I was set up for pressure canning bone broth. Into my second day I think, the cord was loose where it connects to the canner. I touched it slightly and the Canner shut down, I had essentially unplugged it. Well I started over again but it hasn't worked right since. The beep it makes at every process became inaudible and it didn't seem like the jar warming process was as hot. It also got stuck on the 10 min venting and would not move on. I restarted several times and it would work every other time or so. I contacted Presto and they were very helpful in that they are going to replace it. I am not sure my broth got up to temperature or not now. It went thru the process but was the temperature hot enough...I don't know.
Wow--that is quite the experience. I am glad Presto is replacing it for you.
I’m going to have to get this canner. Thank you for the info
You are welcome.
Love your channel ❤️
I bought a Nesco/Carey canner last year hoping to learn but it’s still in the box😰
Hoping one day you will do some videos on it. Thank you for your time and wisdom .
I have ordered the Nesco and plan to run a few tests on it when it arrives. However, it is not due to arrive until the first of October. Ridiculous! Thanks for your comments.
I got my Nesco last week. So far I've water bathed dill pickles in it, pressure canned 13 pints of mixed string beans and 11 pints summer sweet peas in it as well. Everything sealed, seems to be good. I'm loving it so far. Stocking My Pantry has a really good video on the Nesco/Carey canner, it also comes with different "valves/weight" to use depending on your altitude
Love your show
Thank you! Jim
Thank you again. Science rules.
Our pleasure! Yes, it does!
Thank you Pam I have learned so much from watching you over the past few years. I was wondering if you can safely pressure can French style green beans. May you (and Jim) have a blessed day!
Check with the USDA (nchfp.uga.edu): Canning Vegetables and Vegetable Products: Beans, Snap and Italian--Pieces, Green and Wax. Jim
I have looked this up because it did not specify "French Style" I did can my beans whole just to be safe. I thank you Jim for your knowledge and time. Vicki
great video.. thank you so much for your time..
Glad it was helpful! Thank you.
Thanks for all these wonderful videos about pressure canning! One question I have here is can you use the frozen green beans same process you used for outdoor canning of them with this presto digital?
I'm so glad you're doing these tests and sharing them with us. Do you publish your results in any journals too?
No, not at all. Without many more tests at various elevations it would never be accepted in a reputable journal. But thank you for asking.
God bless you for always showing us the safest method and the results. You have probably saved lives and don't even know it! (The good Lord knows though!) :-)
Thank you very much.
Thank you great information
Hi! I just heard about you while watching a video of the Angry Prepper.
New subscriber! 😊👍🏼
Welcome! thanks for subbing! We are glad to have you along on our adventures.
awesome information you have provider. Will check out your site.......
Red I love your videos. You are very thorough and you make this science easy to follow. Thank you.
If I sent you a brand new Nesco/Carey electric canner, would you be willing to do your science on it? I think there will be a lot of interest in that video along with one on an instant pot duo. I know there are many people canning in those and we need to see the science for them.
I use the Nesco/Carey and I would love to see it scientifically tested!
Instant Pot Duo is not a pressure canner. The IP Max is. If you watched one of Pam's recent videos using the Max, she pushed pressure cook by mistake and none of the jars came to correct temperature.
@@suesmargiassi4195 yes, I understand about the max. I know many believe they can use the duo to pressure can. It would really be a saving of dangerous situations to see what happens in one of those.
Don't tell Jim, but I am slowly thinking about doing some testing in the Carey. LOL! I have had so many requests for it. You don't need to send me one, but thank you so much for the offer. My hesitancy is that people think that my results "prove" something, and they don't! My results are just one indicator.
Sue--That is absolutely correct. And for that reason, I will not test the Duo. I am only interested in pots that claim they can safely pressure can.
First of all, great video. I followed the instructions and thought I had the correct results. Everything sealed, there was no siphoning. However, a friend told me that I should have used the green valve (for high elevation) but I'm in Pennsylvania (not high elevation). Now, I'm wondering if my jars are safe.
Pam has given her Digital away and cannot remember the information on the green valve. But, your owner's manual will give you that information. Jim
I bought the Nesco digital canner and did my first jars of tomatoes today! They didn’t end up being all the way full but that’s ok. They are sealed and look good. Can’t wait to try green beans now!
Also, I watched another video on canning green beans and she said that if your jars are cool, the beans should be cool. If your jars are hot, the beans should be hot. Is this right? I’m unsure of how to keep my jars warm and have the beans warm too. Seems like an unnecessary step. The tomatoes I cannned yesterday I did without hot jars and they turned out fine.
I'm assuming since you didn't show anything but green beans in water that you didn't blanch, etc. but did like a raw pack, correct? Thanks for all you do...susan in florida
Wow pricey unit but might be worth it. Nice demo!! 👍🏻
I love mine!
Mine was $249
Thank you.
Hello Rose... I'm not sure where to post this. But I have noticed a lot of canners and you saying they wish they could Bypass the jar warming phase on the PDC. Yes you can.
ON PAGE 49 of your Manuel it says. PRESS and hold the > for 5 seconds until it shows HEAT Icon.
I have done this successfully a few times because sometime my plug connection to wall doesn't connect properly and I loose my setting after I've warmed my jars and filled them and ready to can.
Thank you for all your wonderful videos.
Thank you for this note, but I have tried this several times and on my machine, it won't work. I also have a different manual.
Great video. Not tempted to give up my regular 21 qt canner however.
Me either! My Presto standard 23 quart stove top pressure canner is still the one I have the most confidence in.
Fantastic video! Makes me feel much better about the Presto canner. Where did you get the data logger?
The information for the logger is in the description of the "Testing the Presto Digital Canner" video.
@@RoseRedHomestead Thank you!
Excellent!!
Thank you!
@@RoseRedHomestead best information I've seen to date so thank you!!
This is awesome! We haven’t tried green beans yet!
Green beans are so easy! Hope you try them.
@@RoseRedHomestead I’m planning to ... you’re you tube network of canners is really inspiring me and taking the fear out of canning!!
Is there a reason you put the data logger jar on the side instead of the middle?
Fascinating!!
Thanks.
Have you had any issues with teflon coating peeling off?
You are amazing!
Wow, thank you!
My very first time canning, so I got this machine. I made 4 quart jars but read it as beans instead of green beans, so did 90 mins. I messed up. Should I throw them away as burnt or will they be ok? They look ok.
PS Thank you for all you do!
Thank you
You are welcome.
This is such a fascinating video. I am blown away by your process of testing. How did you learn? Are you a master canner, scientist, etc? No - not being snarky, but very curious how you got to know how to do this method.
I did not interpret your comments as snarky! LOL. Yes, I am a science education professor and have lab experience with scientific equipment. I love to do this kind of stuff!
@@RoseRedHomestead I knew it! 😀 It's great to have someone with that type of background to be able to explain the science behind things. There are tons of opinions, but I prefer facts and the reasons behind those facts. Thank you for taking my question at face value and taking the time out of your busy schedule to answer it. 🤗
@@jnbsmom LOL! You are very welcoome.
hi there! hope all is well. csxazwould you recomend the Nesco or the Presto electric pressure canner for begginers? thank you for shariing
Thank you, but why do you seem to be concentrating on the presto canner? I know you did one on the instant pot canner, which I love to use for pints. Are you preferring one over the other?
I had many requests for the Presto since it was exclusively for canning rather than a multi-purpose pot like the Instant Pots.
Do you wash the jars and lids before starting? First time canner here and I’m so confused!
Pam I was wondering if I could ask a big favor. With the way you research and your scientific background. I feel like I can take your word about how this could be done safely. Is there anyway that you can show us how to do garlic infused cooking oil? I understand that it’s a little tricky that it can cause big problems like botulism and stuff like that if it’s not done properly it’s more than just dropping the garlic into the bottle of oil. Can you help please. thank you love your videos.
Thank you for your kind words. I don't do that--I think it is too much of a risk. Here is an article that may help: ask.usda.gov/s/article/Can-you-get-botulism-from-garlic-in-oil
Ah ha. Found the video where you used the scientific data logger. Can you recommend a temperature data logger? Link, please? Thank you!
I used my new Presto electric canner last week for canning 7 pints of green beans
Sounds good.
My Evaluation is
5, 305 ft. Will this canner be safe for my area
Do u blanch your green beans before packing in jars?
ty :)
You are welcome.
I have a NESCO/Carey and would love to see a video on its safety. After seeing your results on the Presto , I'm concerned.
I have decided to test the Nesco/Carey, but it will be a few weeks.
So I know you only canned a few selections of items in your testing. Would you feel it’s safe overall based on what you found for items like potato chunks, soups etc? Thanks. You’re the best 💕✌️🌱
I would feel safe with tested recipes except for anything that is thick like meat sauce, which failed its test when I did it, and any other thick food.
We have well water that is very hard. What would you recommend to keep the canner from getting clogged up with mineral deposits left behind from this water?
A bit of white vinegar would work. Great question...thanks.
Great YT Pam. It looks like a lot of water in the caner. How much water is used? Thanks so much.
The instructions call for 3 quarts of water, so that is what I put in.
Will a pressure cooker do the job or do I need the canner?
Hi Pam, I am having trouble finding the Presto digital canner. Is there a model number or other information on the canner you purchased
This is the one I ordered, but they are out of stock almost everywhere. I am not sure if Presto has pulled them back or is making some improvements to the design, or they are just so popular that are selling out everywhere. Here is the link: www.amazon.com/gp/product/B089P2W2N6/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1
Would it be necessary to put the logger tip into the middle of a green bean, why is it ok that it just measures the water?
Caitlyn: The green beans surround the probe. Jim
So what is the final answer? Presto or Instapot. I am single and will use if for mostly canning soups, meals like Swedish Meatballs, Stews, stroganoff, and the like. Can't imagine wanting a quart of anything. I enjoy cooking but I do have an induction range so aluminum canners are out. I am leaning towards the Instapot but the reviews say there is an error code issue. Have you had an error code yet.
I have not had the error code appear on my Max and I was not aware it was an issue. My preference is definitely the Max. I feel it is safer.
I might want to try canning with this gadget.
When mom & aunties canned, I was always afraid their canners would blow up!!
That was a very common fear in the 60s-70s because occasionally one blow up. They have made major safety improvements on today's pressure canners.
Oh I hope this works and is safe because I just purchased one
I tested it and it was safe at my elevation of 5000 ft, which means it would also be safe at elevations lower than mine. I can't say based on my testing what the results would be at higher elevations.
I really appreciate your video's. I've never canned before but I am now. I've already water bathed 16 quarts of tomatoes. I need to do my green beans, but I don't have an electric canner. What I need to know is how much water do you put in a canner? How far up the jars should the level be?
The amount of water depends on the canner. For my standard 23 quart stove top pressure canner I put 3 inches in the bottom. The instructions that came with your canner should give you that guidance.
@@RoseRedHomestead I wish it did have a booklet or something. I only have care manual. I was sure it would come with a book, but no. lol It's a 32 q stove top with gauge and weights. I just couldn't find anything to tell me whether the water just comes to the support or up on the jars. 3 inches in mine would be slightly up on the jars. Base rack is about 2 inches above bottom. Thank you.
Miss Pam I have a question for you . Not related to canning exactly but if anyone can answer it you can . Here goes….. I grew up drinking Sassafras tea ( I’m 64 for reference) as a child as did my entire family and loved it. Now it seems the FDA states Safrole oil is carcinogenic. My question is are sassafras leaves safe to dehydrate and grind into file’ powder or not ?? We have beautiful sassafras trees here in SC . Thanks for your help …Linda E.
Thanks for the question. I did a little research and don't think I would risk it. I also learned why root been extract no longer tastes like it did when I was a child and my dad made homemade root beer with dry ice (we have a video on that). Here is one reference I checked: www.medicinenet.com/why_is_sassafras_banned/article.htm
Pam did u blanch the green beans?
I have a Presto Electronic canner and I have seen other u -tubers process 4 or less quarts in this canner. My instructions say pints. Can you possibly do a video on the safety of this with your little tester thing a- ma- jig. I asked the U-tuber if she has a larger canner so we can also buy one and I have not received any response. Maybe a test run with water or something as to not waste any product incase of failure. I trust you will find the answer for us. Thank you so much.
I would follow the instruction book that came with the pot. I have processed and tested both pints and quarts, but used 5 quarts and 8 pints each time.
Do you have any experience with a steam canner? I have the usual water bath canner and a stovetop Presto Pressure canner but my steam canner is new…so I’m researching usage. Great demo on the digital canner.
Healthy Canning has a good website with safe reliable information
On steam canning
I used one years ago and then the USDA recommended against them. However, they have now changed their recommendation to say that they are safe. Here is what they say: nchfp.uga.edu/publications/nchfp/factsheets/steam_canners.html
Well, you once again provide a wealth of knowledge and solid info.
Would you consider doing some quarts of green beans or potatoes in this canner? Can it take quarts?
Please give the model number for this canner.
She did. She showed the test results for the green beans in quarts in the video
@@SugarBeeFarm well I missed that! Thank you. 😀
I would feel safe doing either so long as they were not packed too tightly in the jars so that the liquid can move freely around all pieces of food. Here is a link to the one I bought. www.amazon.com/gp/product/B089P2W2N6/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1
