    A 50 mg tablet of zinc added to each quart will keep the beans bright green AND it’s good for you

    I always raw pack my green beans. When you have a hundred quarts to do, you gotta save time somewhere. Your raw pack jar probably could have had a few more beans put in it if you have that much space at the bottom. I don't get that much space in my jars. Both taste good and that is the important part.

      I have always raw packed for the same reason, time! We usually can at least 100 jars, but this year I decided to try the hot pack. When doing just 2 canners a day (14 quarts) I can handle the hot pack.

    Wish you could have said if there was any taste difference. I find raw pack carrots to be less mushy than hot pack. Same with beans 💕✌️🌱

    The blanching process removes the air inside the beans so they don't float once they are canned. Less air in the beans going into the jar means less air that has to be expelled during the canning process. Floating raw packed beans still have air in them, that over time can expel into the head space and spoil a sealed jar.

    Using a pressure canner cuts the time to 25 minutes. My mom didnt have one just a regular canner and she said you must leave in for 3 hours for reason we only cold packed tomotos we froze the green beans. we tried freezing corn on the cob and it tasted horrible. Thanks for the information. 73

    What is the reason for not re-using the blanching water for canning? It seems nutrients are saved if you do.

    I always raw pack. The beans should settle to the bottom of the jar as it cools. I know mine do.

      Gay Nell Hilton we always cold packed and tamped down the beans in jar as we go starting at a third full & using wooden spoon handle. Great- Gramma & Gramma always made them this way. With 13 & 11 kids respectively and mostly boys in each case they made every jar count.

      @@carlam.9529 Once the beans settle, there is the same space at the top as as there was when you put them in the canner. Just make sure you pack them pretty tight since they will shrink a bit in the canner.

    Thanks for the great video, Wanda. I always raw pack my beans. If you pack your jar tighter when adding the beans, they won't float. You mentioned the possibility of breaking the jar when you packed it so you didn't pack it tight. I pack mine pretty tight and never broke a jar. Also, when raw packing you can fancy pack with long beans running from top to bottom of the jar. They are great to enter at the fair.

      It works best if you lean the jar over on its side and lay the beans in from bottom to top. It helps to cut them all to the same length before starting to fill the jar. Pack it fairly tight so they don't move or have room to slant. Then I just process them the same as the snapped ones. I usually do a mixed canner because it takes longer to fancy pack but it is fun and looks great on the shelf in the kitchen.

    The air in the bean pods has been replaced with water in the blanching. If you had pounded the raw pack in with handle of wooden spoon they would not have floated. This is how we've done gbs for at least 4 generations. (except for leatherbritches. Of course)

    Why do you line up the “ball “with the “ball”?

      Danny prefers the visual of them lined up, so Wanda does it that way. I have done so for identification. Such as the ball with ball is one seasoning, and the ball with whatever is on the other side (year info, picture, whatever) is a different seasoning, and so on. But that's only important to me until I label them once clean and dry. I rarely see the lid and jar all at the same time during storage.

    I have always hot packed my green beans as well. I don’t like the beans floating in the jars. I feel like I save room, which I have to be careful of. Besides that is how my mom always did it so that is what I do😀

      I've done both -- I think hot pack beans (or anything, really) are mushier because they're cooked longer. I'd rather have less beans per jar and have a better texture.

    I know this was three years ago but I just got a super abundance of green beans from my garden this year and I just want to know if there was any difference in taste of the green beans? I use a ham hock to season while recooking them, and I know they will taste hammy, but was there any difference in texture or taste? Thanks for your videos!

    I like hot pack. I like softer beans but even after I open a jar I cook the beans for a good while. I use the hot pack cooking water to add to the beans in the jars.

      I had a jar that didn't seal. Danny said they tasted better but they hadn't been in the jar but a day. So it is hard to compare the taste until the jars have set for a month or two.

    From what I have seen elsewhere, they essentially shrink a little during blanching. I assume the gap is because of that. Basically you can't fit as many in there raw as you can after blanching.

    Why do you snap the beans instead of cutting them on a cutting board with a knife? Does it matter?
    Can you omit the salt?
    What is the difference in taste and texture between the raw pack and hot pack?

      I would rather snap but if you want to cut them, I guess it wouldn't matter. I get to sit down and relax while snapping. The salt is what preserves them. Danny noticed a big difference in taste. He said the hot pack tasted more like fresh beans.

    Hi. When you hot pk, why not use the water you blanched them in when all of your beans are blanched? Aren't you losing some vit.s by not using the blanched water verses the plain boiled water? Nice teaching videos. Peace to you and yours

      That blanched water will have any dirt or trash in it that might be on the beans. It will look dirty and you will have dirty looking beans when canned. You only leave the beans in the blanche water a couple of minutes to set the color. Always use fresh hot water.

    I know you are an ingredient canner, but do you know if it is possible to can southern style green beans that have bacon, onions and small red potatoes? That is the only way that I like green beans.

      We can English peas and carrots in pints. Jams and Jellies in pints, but we do most everything else in quarts. That is 2 meals for us.

    I raw packed Yukon golds this year the potatoes were perfect .. there not mushy ... and just wondering after that jar cooled down if green beans raw packed did they settle to the bottom... please reply back on this

      This is a Presto 16 quart canner. It holds 7 quart jars or 9 pint jars.

    I just purchased a brand new canner and it does not have a rack at the bottom. Is there anything else possible that I could use the racks are very expensive!?

    Super dumb question: do you process 25 min AFTER the 10 mins the canner steams (before you put the weight down)?

      You process 25 min after it builds pressure and starts jiggiling.

    That looks really good! I do something a bit in between. I do a raw pack but add boiling water. So basically it's a hot pack without the blanch. They have that vibrant green going into the canner and come out a bit darker very similar to yours. Question: What do you think the blanch adds to the end product?       We had a jar that didn't seal. Danny said it tasted fresher and he liked them better. BUT the jar was only 1 day old. Most of the jars we open are months if not over a year old. So to tell the difference, we would have to wait a year to compare. See if as they age the taste changes.

    Do you always have to use the pressure pot? why can't you water base them, just for long time. I don't think the pioneer days had this method?

      My family used to water bath the green beans but for hours. I would rather be done in 25 minutes. The Ball book doesn't even recommend it. For us pressure canning all vegetables is the safest way. Our ancestors didn't pressure can before about 75 years ago would probably have dried them.
