  • Step by step to canning squash. We had to add a couple of jars of potatoes in the canner to fill it up. Both squash and potatoes cook the same amount of time.

    I harvested 54 crookneck squash today from 3 plants! My plants had grown to 6 foot circumference and almost 5 foot tall, so while I harvested they got a major hair cut! I harvested everything that was 4 inches or longer...as I prefer my squash on the smaller side, they taste better, in my opinion, and I left about 2 dozen on the plants. And now that the plants are less than half the size they where all opened up for sun and air to circulate & aren't trying to support that massive growth they should really go crazy, as if almost 5 dozen wasn't crazy enough! Tomorrow I'll be canning & pickling my brains out!

      I'm almost ready to start harvesting my crooked neck squash. I have two rows a hundred feet long with approximately 80 plants in each row so it looks like I'm going to be a very busy man for the next couple days.

    Oh how I love squash and potatoes. I'm going to match up my veggies like that this year too. I had to get used to canning again before mixing them, and it sure does help when you just don't have the right amount of veggies to fill the canner. Great video, and thank you for the reminder.     We started canning last year. We had been doing it all frozen or dehydrated. This year I have also started curing some meats, and have started fermenting. I am loving all of the options.Keep up your videos, we love them.

    Looks great! My mom asked me to plant some squash for her cooking this year. I only had one plant and I thought I got a lot! Looking at yours I'm not so sure... 😄 looking great you guys. God bless

    Thanks for sharing never canned squash before. Be first time for everything I guess. Can't wait to see recipes I can out it in. That way my daughter won't ever know shes eating it.

    Hi Wanda and Denny! I learned from your video that is a variety called squash pumpkin. I planted in my gardrn pumpkin is round like a ball, zucehini and eggplant. I love canning. But you potatoes in the banks. I would not have thought to do so. You have a good video.

    Last summer I dehydrated some and made squash casseroles and put them in the freezer which was really good.

      Dehydration is one of our next projects. Did you rehydrate before adding to the casserole mixture?

      Yes just in a little warm water and then drain.

    Would love to see the hushpuppy recipe. I tried canned squash once years ago when we planted to many too eat up fresh and my family did not like the texture but I bet they will go for the hushpuppies. Who doesn't like fried cornbread.

      For 3-4 minutes under high pressure, then do a quick release.

      @@miephoex the 3-4 minutes was for blanching. I believe it's 30 minutes for the pressure canner. I know potatoes are either 30 or 45 minutes in the pressure canner.

    I like your method of canning better than other videos Ive seen because you didnt have to debubble your jars because your squash was already wet

    Do you cover the jars with water when boiling jars filled with squash and how long do you boil??

      You covered with water at least one inch above the lid always when water bath canning you could have more water over the lids but at least one in

      For three minutes, same as squash, then cook under high pressure for 3-4 minutes then do a quick release!

    Wanda have you ever made a bread & Butter type pickle with the yellow squash. Your squash is so pretty and just the right size
    for the pickles.

    note to all readers of this video...helpful hint for any canning...always have a small bowl of vinegar handy to wipe off the tops of the jars after you add your veggies...that insures a very clean surface for the lids....also add a heaping tablespoon of vinegar to the water inside your pressure cooker...that insures your pressure cooker to stay nice & clean to where you can see the lines where you add water....next helpful hint is, I use a double boiler to blanch the squash, just enough to get it very warm ( DON'T OVER COOK) 2 minutes should do....next helpful hint is, add 1 teaspoon of canning /picking salt ONLY.... Check timing how long to pressure cook any veggies...look online for your type of pressure cooker to see how many weights to add, you go by your location & it will also tell you how long to pressure cook ALL veggies....in my area (Ga) it takes 40 minutes...HAVE FUN CANNING...LOL...Angel in the great state of Georgia...one of these day, I will do some canning videos & how to make candles the easy way & all types of home projects ...

    How do you use your canned squash? I have only ever had it fresh. Can you do the same types things with the canned as with the fresh?

      I use it in squash casserole, squash hushpuppies, and stewed squash. It can be added to soups as a thickener because it is soft in the jar.

    Never canned by itself, I only can it with tomatoes, okra, onions, ( whatever is available) How do you use when you open the jar?

      I pressure cook my squash 40 minutes ( with 5 lbs weight)...whatever you do, add a tablespoon of vinegar to your water in the pressure cooker..helps keep it clean) also if you keep a tiny bit of vinegar in a small bowl, you wipe off the jars b4 you place the lids on...that insures a clean surface & a better seal...

      It holds its shape, but is very soft when you open the jar. We use it in hushpuppies and casseroles. Works perfect for that. Thanks

    Heard you say a couple of times that you were canning the potatoes at same time as squash because they both had the same canning time...

    when you can squash, then when you take it down to cook , can you fry it with some onions.

    Need to look over all your videos to see if you have any on dehydrating fruits and vegetables. We dehydrate more than we can, since we have earthquakes and when we drive from 6k down to 1k elevation lids can pop loose. And we backpack and dehydrated foods weight less.

      We are only drying herbs right now. We have dried some fruits, a just a few veggies. We have a solar dehydrator plan that Danny wants to build in the future. Thanks

      You have to use a pressure cooker with vegetables. Water bath is just for jams, jellies, fruits and tomatoes. THAnks

      No it has to be done in a pressure canner. Only acid foods can be water bathed.

    Hope you "de-bubbled" your filled jars with a non-metallic utensil to protect your headspace. Just sayin ...

    not much of a canned/ mushy squash eater. I like fried or relish made out of squash. but thank you for providing information for people who do.

      40 Minutes they pack in the jars better when blanched if not they shrink and will leave a lot of unused space.Thanks

      Yes, it is kind of mushy. We drain ours and use it in hushpuppies, cornbread and casseroles. We seldom eat it directly out of the jar. Thanks

      We can it too and use the yellow squash for casseroles and zucchini for bread and fritters. It's great to have on the shelves.
