CRISPY EGGPLANT salad in sweet chili sauce recipe ♡ Tasty like in a restaurant!

Salad "Shirin" ("Lazzat") is crispy eggplant in sweet and sour "sweet chili" sauce with cilantro, cherry tomatoes and lettuce. The salad turns out incredibly tasty thanks to the sauce. It gives an unusual taste - both sweet and spicy. This salad is especially popular in the summer.
I used Aroy-d brand sweet chili sauce, but you can use whatever you sell locally. Be sure to use cilantro; it should not be replaced with other greens. There should be a little soy sauce (you don’t have to add it) so that it doesn’t take on all the flavor. You can use regular tomatoes instead of cherry tomatoes, but it won’t look as pretty.
Ingredients:
- 1 eggplant;
- 1 tbsp cornstarch;
- vegetable oil for frying;
- 2-3 cloves of garlic;
- cilantro (several branches);
- 1 tsp soy sauce;
- 2 tbsp sweet chili sauce;
- lettuce leaves;
- Cherry tomatoes.
1. Thinly cut the skin on four sides of the eggplants so that some skin remains. Cut in half, then roughly cut into squares. Add starch and mix well. Heat vegetable oil in a saucepan and fry all the eggplants until golden brown.
2. While the eggplants are frying, you need to prepare the sauce. Chop the garlic cloves and chop the cilantro. Combine garlic, cilantro, soy sauce and sweet chili sauce in a deep bowl.
3. Place the finished eggplants on a napkin to remove excess oil. Then add the eggplants that have not yet cooled down to the sauce and stir.
4. Place lettuce leaves on a plate and place eggplants on top. Cut cherry tomatoes in half and decorate the salad with them. You can also decorate with lettuce leaves; they can be lightly dipped in the remaining sauce and placed among the eggplants. Salad ready!
