  • Mochi Donut in Japan, they called it Pon De Ring
    They have a special chewy texture, not like the normal bread-like donut
    And mix with tofu(any soft tofu) added a touch of bean taste
    You don't need an oven, no need any molds/ cutter, no fermentation, no much kneading and easy to make

    Ingredients:
    Donut: (make 10)
    100g Cake flour 박력분 低筋麵粉 薄力粉
    100g Glutinous rice flour 찹쌀 가루 糯米粉 もち米粉
    1 tsp Baking powder 베이킹파우더 泡打粉 ベーキングパウダー
    50g Sugar 설탕 砂糖 グラニュー糖
    100g Silken tofu 부드러운 두부 絹豆腐(內脂豆腐) 絹とうふ
    1 Egg 달걀 雞蛋 卵
    20-25g Water 물 水 水
    Topping:
    300g Icing sugar 슈가파우더 糖粉 糖霜 粉砂糖
    2 Strawberry 딸기 草莓 士多啤梨 イチゴ
    1-2 tbsp Milk 우유 牛奶 牛乳

    I made these yesterday and it came out so well however, like someone had mentioned the dough was indeed sticky and I think I added about half a cup more (maybe one cup? I didn’t actually use any measuring cup and just pour it in until I like the consistency 😂) of glutinous rice flour in order to get it to a workable consistency. You just have to play around a bit and It wasn’t exactly not sticky but was workable 🙂 UPDATE: I put less tofu around 60 g and no water so it wasn’t sticky like the first time BUT as mentioned you just have to play around till you get it to be not so sticky. Add water but only a little if it’s too dry.

    I made them yesterday. They turned out great! I coated them with cinnamon sugar and my family enjoyed them very much. I’ll try the strawberry icing next time~it looks yummy 😋!

    I bought tofu because of this! 💖
    UPDATE: I tried it during the weekend and it was fantastic! I did add a bit of vanilla extract for the taste and the icing is TOO sweet for me, so either my icing sugar brand is too sweet on its own or I need find a different strawberry icing recipe.
    Question: can you use air fryer for this?

I'm definitely gonna try to make this tomorrow :)) also I read previous comments saying that using an air fryer makes it a little dense like bread? Not sure but you should experiment with it !

      If you are trying to bake them, maybe you can try to brush some oil on top to create that crispy skin

    I just made them. Was expecting the worst outcome. Surprisingly, it's not sticky as the others had mention, and easy to shape. Tastewise, I was expecting airy soft donut, but it's chewy just as the name indicates. At first it was meh, but as I munch them balls, it grows on me.
    In conclusion, 5/5. Thanks for sharing! :)

      I never try it before

      I've tried popping them into an air fryer using Rie's (from Buzzfeed Tasty) recipe before and while the texture of the inside was alright, the exterior looked under-cooked and it's not crisp like you would get from frying with oil (and we can't get that lovely golden brown color too without frying with oil), so the result for me was kinda like biting into mochi bread instead lol Maybe brushing with oil, like Flour n Flower suggested, might yield better results. Anyway, you can try using this search term 揚げないポンデリング (non-fried pon de ring) to see how the baked mochi donuts look like ^^

      You can try to brush oil on top and bake/airfry it…but i don't think the skin can be as crispy as deep-fried it

      It's fine…parchment paper contain no wax…you can even bake in oven for 240c…deep frying only around 160c

    I tried this and didn’t have cake flour so switched to all purpose flour. I added the corn starch like you recommended but even before the step of adding water, my dough was very sticky and wet. Do you have any tips for this? My dough also looked a lot smaller compared to your dough. Anyone have these problems?

      You can add more flour

      Flour n Flower 밀가루와 꽃 I tried adding more and more flour, but it remained very sticky. I couldn’t get it into the smooth dough where I can roll the ball shape 😞 it just stuck to my fingers

      Next time I think reduce the amount of tofu used (maybe 60-70 g) and don’t add any water (or a little)if it look like it’s a good consistency it worked for me after trying it a second time lol.

      I think you can use all purpose flour which has the protein content similar to cake flour. (Just 1% higher). Bread flour is a high protein flour so..

      Yes…if you have corn starch, you can use 85g all purpose+ 15g corn starch instead

      I think is a YES…tofu gives a softer texture to the donut

      You can use any soft tofu if you can't get silken tofu

    I tried this recipe today and I was so excited!!!! But one problem tho was mine donut came out really hard😖but also if I didn’t fry them for enough time- the inside is still raw.... do u have any suggestions??

      Maybe the initial oil temp was too high?

      ya~ agree, oil temperature is too high~
      you can tell the temperature is ok when you drop in the donut, then it float in just 30seconds

      I never try to bake this with oven
      as the original from mister donut also using deep fried to create the crispy skin

    my dough stick to the paper when I fried it, I ended up fried the balls one by one without the paper...
