  • Here is an easy and fresh roasted salsa recipe mashed in a molcajete. You can also use a blender. ;)
    INGREDIENTS
    2 to 3 tomatoes
    1 jalapeno (or serrano pepper for a spicier salsa)
    1/4 of a medium onion
    2 to 3 cloves of garlic
    **Molcajete or pestle and mortar

    Nice! Someone else on here already mentioned it but ideally you want to mash the onions, chiles and garlic into a paste first before incorporating the tomatoes. This accomplishes two things. 1) Promotes even flavoring and consistency throughout the salsa. 2) Will save you time (and your fingers/hands) from having to wrestle through the tomatoes to get the rest of the ingredients to meld well together. I'm sure you know but for anyone reading that hasn't ever used a molcajete, there is A LOT of elbow grease involved in making salsa the traditional way. Great job btw. Looks delicious! :D

      this isthe way. my mom, gma did it the same way....at the very least, people should roast the chiles, garlic and onion on the comal!!

      Yeah, I have never used to oven for this, but it wouldn't hurt to try it. I will see if there is a difference

    Like your recipes, reminds me of my childhood but I'm sorry to tell you that the proper order in using the molcajete is: first garlic, then jalapeño, onion and last the tomato, the reason is the hardness of each ingredient, you start with the hardest to the softest and in that order you won't struggle at all smashing all your ingredients.       Roasted garlic is easiest I go onion pepper then garlic then tomatoes to add body(volume).

      I agree. Its all entero and boludo. Many pieces don't look smashed at all, just covered in tomato sauce.

    Hope everyone has a safe and happy Memorial Day weekend! I've made this multiple times... In fact, it's now a requirement in my home. My molcajete is too small (my grandmother's, it's over 100 years old) so I just use my blender. Either way, it's delicious! And today I'm adding some cilantro and lime juice like a nice person here suggested... LOVE LOVE LOVE this recipe!

    Thank you! This is excellent and it has become a favorite of ours. It is super versatile. Excellent presentation!
    I make it just like you show except that I take the seeds out of the jalapeño for a milder sauce, and I pulse the cooled ingredients carefully in a food processor several times to make the consistency just like you show it. I don't have a molcajete or similar tool.

    I can’t wait to try this. I Just received my new molcajate yesterday from amazon it looks exactly like yours same color. I Have never used one before and, there was no instructions on what I need to do with it or take care of it. I’m an Tlingit Indian from southeast Alaska. Don’t know much about cooking Mexican foods but, I’m trying.I wish I could come to your kitchen so you can teach all that delicious foods you make.

    I'm a long-time subscriber and I have your cookbook. I love going back and watching the old videos! I recently bought a large molcajete and I will try this recipe. I'm not a lover of really hot food, so I will take the seeds out of the jalapeno, but I love salsa. Thanks for all the recipes and videos! So sorry about your Facebook page getting taken over. I hate how other people take advantage of legit content makers, just because they are too lazy to put in the work themselves. Keep up the great work!

    always mash all ingredients before the tomatoes, to get a chunkier/rustic salsa. love your recipee...its very similar to what I cooked recently on my channel...except i used some dried chiles. i've liked and subscribed! keep these videos coming!

    Just made this after conditioning my mortar omg its soo good and its cheap to make, only thing expensive thing was the bag of corn chips. I added some cilantro leaves at the end and a half teaspoon of lime juice.

    Thank You* I have always wanted a traditional molcajete like yours and my mom's. But mine looks more ceramic stone with rough insides. It's pretty big. But I here the traditional keeps the seasoned flavors. Is this true? Thanks💕🦋

      I think it does keep a seasoned flavor as the material is porous. :)

    Oh boy. I was in a hurry and couldn't find the salsa recipe made with jalapeños and tomatoes so I just sort of winged it. It came out good, according to my son and his gf but still, I came back and found this recipe.
    Wow. So only ONE jalapeño?! I used a whole pound of them. I took most of the veins out, but left plenty of seeds, and some I just took the tops off. I also roasted some of them in a pan, 'cause that's all I had and in 101F temps didn't want to turn on the oven. The majority I boiled for about 10 mins, after the water came to a boil I put them in. The tomatoes, some were roasted, some fresh, some boiled with the jalapeños.
    Finally, I was putting everything in a 3 qt stainless steel pot, so I just added the leaves of an entire bunch of cilantro, and stick blended the lot. I put the salsa into clean glass jars (I filled a 1 qt Mason jar + 1 Herdez jar that had held guacamole salsa), which I've stuck in the fridge.
    I'm not Mexican nor Latina but living in Texas has been an eye opener in terms of food! Love it!! And I want to learn some more! And yeah, buying your cookbook when I get my pension next month!!!

      one jalapeno to 3 tomatoes seems absurd....i like my stuff spicy so I stick with 1 hot pepper per tomato....in my recent recipe i used 5 dried chiles to 5 tomatoes....i would have gone more pppers...except the dried chiles i used were SUPER spicy so it was perfect for me. PRO TIP: use serranos instead of jalapenos...serranos are more consistent in spiciness than jalapenos

    I've noticed some Molcajete's are smooth and some are really rough, does it make a difference?

      The one in this video was fairly new. I seasoned it, but I think over time as I use it more, it should start to smooth out. I remember the one's my grandmother owned long ago were a lot smoother. I think the material is different in some.

      dont do amazon....reason being is you will get a product that isnt volcanic rock....an authentic volcanic rock mortar is what you want, otherwise you are wasting your time. I got mine because it was gifted. it was bought in mexico city. hopefuly you have at least one contact in mexico who is able to get you the real deal!!!

      it looks average, 1 quart size.so comparing to mine, i'd assume 6-7 inches in diameter

      peppers and garlic...always first....tomatoes are last...so u can control how chunky the salsa is. i personally dont like the tomatoes all mashed up...i like some consistency

      seems like quart size, which is average. you can fit about 5 tomatoes on there without oversplling. when i make a large amount of salsa, i usually split it all apart into 2. it's usualy enough

      Nothing wrong with that at all. I'm doing that now. I'm used to working with different ingredients so I ended up splashing the salsa everywhere (autopilot's a bitch sometimes) because I like to bash the bejeezus out of things.

      I think basalt molcajetes are what I grew up with and grind better. My grandmother had two and they were the best. The granite one works good, but it is different. These days I am not using my molcajete all the time, so that could also be a reason I find it feeling different. If you are going to purchase one go for the Basalt one, I think the surface texture grinds better. :)
