  • I love making homemade dinner rolls during the holidays, but they can be so much work. Multiple rises, etc. So this year I wanted to try my hand at an Amish Friendship Bread version, to see how they would turn out. Definitely much easier, but the texture is a little bit different. It doesn't have that stringy pull apart gluten factor we know and love from traditional rolls.

    I’m glad you posted some rolls! Rolls are a family favorite here. Sometimes we just eat dinner rolls for dinner and we dip it in fried egg with runny yolk 😊❤

    I made these and mine didn't rise as I would have liked either. The recipe said to bake 10 minutes or until the tops were brown... 40 minutes later the tops were very light brown. The taste was heavenly, but they are definitely denser than regular bread rolls. I will definitely make them again and I will add more flour and knead by hand next time.

    I made them and they were the hit of Thanksgiving! I did knead them for about 8 minutes. i did not add any sugar, and I did add more flour than called for.

      @@cynthiafisher9907 OH! That's a good point b/c of the sweetness factor! Which, if true, would be awesome, b/c here's nowhere near me that I can buy Hawaiian rolls, so it would be great to make my own!! Waiting to see if they'll reply that they are.

      So, just to clarify, you did the recipe exactly as she did here, but omitted the sugar that she put into the bowl at the start? I wanna make these for an upcoming family dinner, but a sweet-style roll may not go well with what we're having. Thanks!

      ​@@LadyOfRain1 There are recipes online to do Hawaiian rolls. I did one that used pineapple juice. Sounded weirs, but they were delicious.

    If you were using a third cup measuring cup then t looked like you only put 2 and 1/3 cups flour before you "sprinkled more four" in. That might have affected the outcome 🤔

    Definitely think you'll get better rise of the rolls with gluten formation. Yummy! Our family makes a slightly sweet bread for all our holiday bread and rolls. It makes wonderful turkey sandwiches!

    I'm an very old professional baker and I almost always either refrigerate the dough after a short fermentation Then shape rolls morning of Or I let fermentation proceed, shape into rolls THEN refrigerate rolls covered with plastic. May oil tops if you wish. Take out while preheating and bake. If large pan might sit at room temp 15 mins or so. I never use a Tablespoon of ANY yeast even if doubled if a starter is used. A slow rise is preferable for taste and crumb AND using the frig to retard rise or slow fermentation allows one to fit into schedule at home or even in bakeries. A cool dough is quite easy to shape also for those sticky doughs. Look for a cold rise recipe. Many brioche doughs use cool rise technique.

      Might add IF frig is too full for shaped rolls then cut yeast amount and put rolls in unheated area. They will rise slower but may need a few more mins to warm before into oven. They do not need to be kitchen warm to bake.

    Try making them in your cast iron skillet. Does wonders for dinner rolls. Yours looked yummy to me and so quick too.

    I made the white friendship bread it called gor 1 9 x 5 pan I used 2 8 x 4 pans. And I did add more flour. It turned out great

    Rachel, I also use avocado oil in my yeast rolls-bake them in my gas oven. I think the lack of browning comes partly from the avocado having a higher burn temp and also possibly the gas oven. I always have to flip my biscuits over to get the tops to brown. I never had to do that in my electric oven. I still wouldn’t give up my gas stove though! Your rolls looked great!

    Thanks for this recipe try out. Nice job, those rolls look so delicious. I have to admit that I am slightly intimidated by yeast/bread making. Funny enough, my dad was a professional baker. Because I was young, and uninterested, he wasn't able to impart much bread making wisdom to me.😶 In the past I have kept and used friendship bread starter. It is just a bit too sweet for me. I tried to get a sourdough starter going without success. I plan on trying again in the future.

    I made these today and they are rising currently. In regards to the amount of flour it depends on where you live. Even with it being so dry where I am living I had to add more flour. So I'm wondering if the recipe was wrong about the amount of flour. Interesting anyways. I tasted the dough itself and I can tell its going to be VERY good. It tastes very similar to my buns recipe that is more of a sweet roll. I've made Hawaiian rolls before and this (to me) tastes different from that. They are currently rising and I'm waiting until they have doubled in size before baking.

    Rachel, I have a question. My Friendship bread starter didn't bubble much at all🥺 I did research and it's suppose to bubble and your kitchen is suppose to really warm for this to happen. How warm is your house? We heat with wood and pellet stove and in WI almost straight across from you. I'm going to try again. I have sourdough going and make a lot of sourdough and yeast breads. I kept my starters far from each other too. I am enjoying watching you having fun with your Friendship bread starter and all your ideas!!

    I wonder if my starter that I only had gluten-free bread flour to use with would make these more successful? Whenever I squish my bag of bread flour starter it is definitely more stretchy and smooth than my all purpose flour starter.

    I'm having such a good time following along and learning new recipes. We are a gluten-free household and it has been working just fine for us. So far I've made the pancakes and lots of the Amish friendship bread. I will be trying these this weekend!

    I think the dough needed a bit more flour because it sounded like you needed the dough to be tacky and yours looked sticky. Also more kneading might have helped. Having said that, they certainly looked light and fluffy with a good crumb! Linda, Quebec city Canada

    So far I have tried the cinnamon bread (yum) and the pizza dough (fail). I am curious- what is the benefit of using the friendship starter and conventional yeast vs a regular recipe with just yeast? My regular recipe has the same amount of yeast added as this recipe. Thank you for posting this series, it is so fun to follow along!

    Rachel, how cups of flour, did you need You we're using 1/3 measuring cup. You 3, 1/3 cups, then you put 2 1/3 cups and another 2 1/3 cups and a little more
    Total 7, 1/3 cups. You were short 2, 1/3 cups.????

    Love this series but have a question. Are you dividing the mix at the 10 day point or are you simply baking items with the starters that normally get given away? And you are baking on 5, 8, or 10 day mark?

      If I have time I'll use it at any point if active and I need it. For example today is day 12 actually I did not have time on day 10 to do anything and its just a huge baking day. But I've also many times used it mid cycle

    Do you can butter? If you have, I haven't found it on your channel.lol if not could you do a video on it.i have seen so many videos ,some pressure can 75 min,some don't pressure them at all.I am so confused.some skim off the fats when melting the butter some don't.     You missed a couple of scoops of flour. You were only using a 1/3 cup measuring. You kept forgetting it wasn't a 1/2 cup measuring.
