Any recipe that is "tricky" is not "easy"....lol. I do love watching you though. I am a Canadian and my husband is Sri Lankan. I have tried many Sri Lankan recipes over the years and this is one I have not yet mastered. I prefer the Watalappam to have caramel syrup at the bottom of the dish that remains after it is baked. Mine always turns out firm in every recipe I have tried. I will continue to try after 4 long decades. Wish me luck!
