I hv just cooked braised soya sauce pork belly with potatoes. Sometimes I substitute the potatoes with soya bean curd n black fungus, n of course can be done with hardboiled eggs. Sometimes I use black mushrooms with chicken feet. U can even add in sea cucumber. This recipe is a family favourite n is very easy to cook especially with a pressure cooker after a few minutes of browning the pork belly. To make it more tasty, I sometimes add in dried cuttle fish to braise together. Happy trying. The above recipe is very forgiving n has been my favourite fr childhood days. Very good recipe. I would add a teaspoon of plain flour or two (mixed with water) to thicken the gravy though, but that's just me. I find the braised gravy too watery, and a stew-like consistency may also make the dish more mouth-watering...

Indonesian chinese has this kind of dish also , depending on which chinese you are (Hakka, Theow Chew , Hokkian etc ) it will be slightly differentb, but I find the ethnic of Benteng Chinese they called it "Babi Hong" , they fried the skin first so it create special texture , and also they put dry Sotong (squid) for ummami , it is very different .

Use chuck beef for stews/braising like this! With chicken, any part will do but the best would be something which has both fat & meat - so chicken wings, drumsticks, thigh will be best.
