Protein-Packed & Silky Eggplant Dip | A Light Twist on the Epic Baba Ganoush Recipe 😍

  • In this recipe, we're going to use cottage cheese, the trending ingredient in the food sphere these days ❗️Cottage cheese is rich in protein, low in calories, affordable, and versatile. Inspired by the Middle Eastern baba ghanoush, this lighter version incorporates cottage cheese for a creamy, flavorful dip that's perfect as an appetizer or side dish.
    Instructions:
    1 - Clean and pat dry 2 medium-sized eggplants. If desired, prick them with a fork or make small cuts with a knife to accelerate the roasting process. Brush the eggplants with olive oil.
    2. - Preheat the broiler to 350°F (175°C). Place the eggplants on a baking sheet and broil for 10-15 minutes on one side. Remove from the oven, flip the eggplants, and broil for another 10-15 minutes. If necessary, continue broiling back and forth until the eggplants are tender and well cooked through (check them by inserting a fork).
    3. - Let the eggplants cool down. Remove the heads and peel off the tender dark skin. Transfer the clean eggplant flesh to a plate and set aside.
    4. - In a large mixing bowl, add cottage cheese and blend it until smooth and creamy. Add the eggplant flesh to the blended cottage cheese, olive oil, salt, cumin, smoked paprika, black pepper to taste, lemon juice, and fresh parsley. Blend again until the mixture reaches a smooth consistency similar to that of baba ghanoush.
    6. - Transfer the mixture into a glass container. Let it sit in the fridge for at least 1 hour to thicken and allow the flavors to meld.
    7. - Before serving, garnish with fresh parsley leaves and drizzle with an extra 1 tbsp of olive oil.
    Ingredients for 6 serving eggplant dip:
    - 2 medium-sized eggplants (450 g)
    - 1 cup (200 g) cottage cheese
    - 2 tbsp. olive oil
    - 1 1/2 tbsp. extra olive oil, for brushing and drizzling
    - 1/2 tsp. salt
    - 1/4 tsp. cumin
    - 1/4 tsp. smoked paprika
    - Black pepper, to taste
    - 1 tbsp lemon juice
    - 20 g fresh parsley
    - Few parsley leaves for garnish
