Best tool to scrape out eggplants is a silicone spatula. And if you don't really like the taste of fresh garlic, wrap the garlic in alu foil and bake them together with the eggplants. No need to clean the cloves, they get soft and you can squeeze them out. Roasted garlic has a mild nutty taste, just lovely.

I love this!!!! I usually buy a platter that comes with Falafel, baba ganoush, Hummus, Tabouli, Kibbeh, Stuffed grape leaves, and rice pilaf from the Lebanese restaurant near my house but my wallet has been going through some distress lately 😅 so I'm definitely gonna give it a go and make it from scratch at home. I'm originally from the Caribbean but I loveeeeeeeee Lebanese food so much seriously! Thank you so much!!!!

I am trying this right now! Just put the eggplant in the oven, I've made this for years but stopped because I was always disappointed by the appearance. The color would be too dark and unappealing. I have high hopes for your recipe! Your vegan grapeleaves recipe is now the only one I use! Thank goodness I found YOU!!!! Keep up the incredible work you are making me very happy!! xoxo
