What to look for to find new fishing spots in the Gulf of Mexico

What to look for while you're running on plane between spots. Most touchscreen units these days allow you to touch the location you want to mark even on the depth finder mode. You can then save the point or do what I do and take a picture of it to remember what you were looking at in the future.
