    You must have a great team working for you. Chopping the onions to this amount must be exhausting and also all that peeling of garlic skin must be hardwork. People don't realise the amount of work going into creating curries in a restaurant. Stay blessed.

    Bro, plz take the following comment as constructive criticism as I really can’t fault any of your talent, passion and dedication to making good food.
    The only thing that gets me if the aluminium pots and pans scrapping
    Stainless steel is a harder metal than aluminium and over time, the aluminium will leach into the food.
    It would be really good to replace some of the equipment to stainless, but I realise that it might not be economically viable.
    But again, plz don’t take it negatively.

    Out local BIR style restaurant does an onion chutney they serve with papadum. I'm pretty sure it's maybe onion, Kashmiri chili power (not spicy at all, but bright red), possibly cumin and/or coriander, probably a little sugar? I'd love to see your take on that and other condiments.

    The onions aren't caramelized, they are mushy like mash potatoes.

      You can caramelise onions if you use more oil and less onions

    I am retired living in Northern Thailand, I miss my Indian food from back in Northern UK. I used to go to an Indian Restaurant in Leyland and have the most fantastic dish it was called Murg Charg Quite red in colour very aromatic and I have never seen it on a Menu anywhere else, If you know it and can show us how to make it, well you would make an old man very happy indeed.     Good day Latief! What is the difference between cumin and black cumin? I love Indian seeds and spices and I like to know the differences in using it! Love your recipes! I'm vegan. 🙏🏽❤

      I think the black cumin you referred to is shahi zeera which is more for fragrance whereas the cumin which looks like slim rice looking spice is more for flavour which the ground spice is made off!

    Is there a significant difference between black cumin and regular cumin? I cant remember having seen black cumin anywhere i shop.

      Black cumin is thinner & lighter. Very different in flavour and aroma

    I have eaten some really hot chillis. Most are acrid! Some I find have flavour and wondered if you have experimented with any of those super hot chillis? Maybe slow cook then use skins or fry with rice then remove the chilli?

    When I lived in the UK I used to eat a lot in Bradford and they'd give raw onion, tomato and cucumber as an appetizer in Kashmiri places. The onions were always proper strong and tasty. I've never eaten anything like them since.
    This video has inspired me to go the bhuna route for my next curry session at home. Thanks for sharing.

      I use organic extra virgin olive oil as its the healthiest. I don't mind using extra oil in curries as it break down tomatoes, onions, ginger and garlic faster.

    Would love to see a small-batch version of this for freezing-- for recipes that are going to get hit with a stick blender nomatter what, so the texture doesn't matter. At that point, would you just cook them till they caramelize and start to fall apart, for more flavor?

      No, bhuna onion has to keep its shape. If you cook for too long it would become mushy.

    Beautiful!! I've meaning to ask for some time if you know of a different type of phall curry, as opposed to just adding chilli powder? Have you tried to incorporate a bhut jolokia, trinidad scorpion or carolina reaper chilli in the right quantities to create a super-hot curry?

    Latif - if you stopped cooking it earlier, while the onion was still firmer, would it stand up to freezing? Asking because this would be an awesome ingredient to have available on short notice...

      In my opinion if you freeze Bhuna onion it looses flavour. When freezing base gravy it’s no problem whatsoever

      i would suspect the onion breaks down when frozen. certain foods just dont freeze well, the water content inside the cells cause them to burst, destroying the consistency
