    Greek Style Green Peas - Arakas (Greek peas and potato stew) | Αρακάς Κοκκινιστός
    Araka Kokkinistos is a traditional Greek vegetarian recipe like my yiayia and mama used to make. I learned the recipe from my mom and I am so grateful for that. My whole family loves araka, even my 2 year old daughter eats her Greek green peas!
    Delicious, healthy and comforting Greek peas, potato stew with tomatoes (Αρακάς Λαδερός Κοκκινιστός). A traditional Greek dish that is served in every household in Greece and with this super easy recipe you can recreate it from scratch like a Greek.
    Tips to make the perfect traditional Greek Arakas:
    Greek peas is a traditional Greek Vegetarian recipe which falls under the category of Greek dishes called “Ladera” (Λαδερά), meaning recipes prepared only with Greek olive oil so make sure you are going to use some good quality Greek extra virgin olive oil, which will definitely lift the flavour and of course don’t forget the dill, it will definitely lift the flavour.
    If you don’t have these two ingredients don’t make this recipe!
    What ingredients to use:
    1 (18 oz) pack frozen Green peas (or 500g peas, peeled)
    2 potatoes (medium-size potatoes), peeled and sliced
    2 carrots, peeled and sliced
    1-2 onions, chopped
    ½ cup fresh dill, chopped
    ½ cup Greek extra virgin olive oil
    ½ cup tomato sauce
    Salt and pepper
    (and if you like it SPICY then add some red HOT chili pepper!)
    What to do:
    First heat the Greek olive oil in a medium sized pot (or your pressure cooker). Sauté the chopped onions until soft. Add the frozen green peas and sauté until soft (if you use fresh green peas add it to the pot with rest of the veggies). Then add carrots, potatoes, dill and tomato sauce and sauté for a little more. Add enough hot water so that the ingredients are covered just a bit (if you cook in a pressure cooker add less water).
    For the pressure cooker:
    Bring to a boil. Add salt and pepper, mix well and cover with the lid. Then when the steam starts coming from the sides then lower the heat to low and cook for 15 to 20 mins (it needs different time in every pressure cooker, check your manual) This recipe should only be left with the olive oil, almost no water and the potatoes need to be soft.
    For the regular pot:
    Bring to a boil and boil for 15 minutes or until the potatoes have softened a little. Add salt and pepper.
    Mix well, lower the heat and simmer for 10 minutes, until peas are soft and water is gone to the minimum. (this recipe should only be left with the olive oil.)
    Serve at room temperature and enjoy this delicious, extra comforting Greek peas and potato stew (arakas laderos) with Greek feta cheese and crusty bread or dakos (Cretan dried bread) to mop up that delicious tomato sauce!
