Send invoice, include terms, say 7 days of post mark or date on invoice, add admin fee and interest, further red letter, incl the final notice and another admin fee, needs to be sizable enough so that you can go to small claims court, and they pay for small claims court.

Think its hard water though in Harrogate, not sure, it is good for health, but not for tea. Most tea houses there filter and soften the water!!!
