    STEP COOKING:

    If you weigh out sour cream, then you need to take 20-30% more of it than is required by the recipe.
    Now whisk cold sour cream in the same way as heavy cream, starting at low speed of the mixer, gradually moving to high speed. And gradually we introduce sifted icing sugar. As with whipped cream, there is a danger of overpowering the sour cream.
    This cream turns out to be very delicate with a slight sourness characteristic of sour cream. Many people like this option even more than whipped cream.
