My mom always made Taco Casserole and I do it now too, my son and husband love it. Doritos crushed in the bottom of a 9x13 pan topped with taco meat mixed with corn and beans, like black or pinto, topped with cheese. Bake it at 350 for about 20-25 minutes then top with a salad mix of your choice. YUM!
When my kids were little we had make your own pizza on tortillas for their birthday parties. The kids were so excited to make them themselves. Cool mom points with that one!

Great ideas & tips. I especially admire you for coming up with so many meal ideas. I’ve always been a very fussy eater & only like things like fish fingers & shepherds pie etc. I hate anything spicy. A popular takeaway in the UK is fish & chips, often with mushy peas. Jacket potatoes are a great meal option, especially when you top them with cheese & baked beans.

I also love making make ahead meals whether that be freezer meals cooked from raw or things already cooked and in the freezer like cooked ground meat, breakfast burritos etc. I do love to cook…but I do get that burned out feeling sometimes and this gave me some really good ideas and motivation! I have beef and noodles in the crock pot on this snowy day. Tomorrow is fried potatoes with polska kielbasa and green beans. Soup on Sunday. Maybe chicken tortilla soup. Biscuits and gravy is a big go to here. So many options just have to look in my frig, freezer and pantry for inspiration.
We had a tiny bit of salsa, hamburger, a new jar of marinara, frozen onion and colored peppers, small tomatoes as perishables in frig so we used them to make spahetti. Threw in some garlic powder, celery seed, basil, in with spahetti and it was so good. Trying to use up perishable food first each supper. We been only used a third of a jar of marinara from Aldi. It was so good. Trying to get into the habit of using ip perishables instead of freezing them to eat later.
Super funny about having beer in the pantry for just stew! We aren’t drinkers either but I would enjoy using beer and/or dry white wine to cook delicious meals.
I also save my juices from my roast and use it for my beef stew. If I am not making a stew right away I put the juice in the freezer to use when I do make stew.
I was just talking about meal ideas with my sister So this was a nice video We are gonna recipe test more often and give each other encouragement in the kitchen Cause we are home cooks trying to survive the dinner hour

Kimmy this video was full of great ideas. My challenge is that I am so used to preparing food for a family of 9. I am now preparing food for just two. Until the last 4 months I would be able to use a portion of dinner for my lunch. Now that I am retired there are usually always leftovers. Any ideas as I do not always want to have leftovers especially if I am creating a menu for the week. My goal in January and February is to use what I have in my freezer and pantry and not go to the store.
Your tip on sheet pan breakfasts for eggs pancakes is awesome! We enjoy pancakes but don’t have them often because of the time. This is a great tip for time saving and meals. I see yummy pancakes in my future. Thanks for sharing tips on twists for ingredients

Variation of your Dorito salad was given to me in 1984. You use a small bottle of Thousand Island dressing instead of the Catalina.

Our family loves Tot-Cho’s. Instead of chips,we use potato crowns. Add all your regular taco fixings. So yummy!!

Looking back it reminds me of what they now called Bug Mac salad.
