▻BREAKFAST SANDWICH
Makes 4 servings
Macros per serving: 17g protein/43g carb/9g fat (Cal:321)
Ingredients for the omelet:
•60g “garbanzo” chickpea bean flour (1/2 cup)
•1 block (350g-400g) mori nu silken extra firm tofu: amzn.to/359JGbB
•1/4 cup (2oz) water
•1 teaspoon onion powder
•1 teaspoon black salt to taste: amzn.to/3petSew
•pepper to taste
Filling ingredients:
•100g fresh chopped spinach (split into 4 equal portions)
•1/4 cup chopped green onion (split into 4 equal portions)
•4 vegan cheese slices *1 slice for each sandwich
•4 English muffins

▻SAVORY CREAM OF RICE TACO BOWL
Makes 4 servings
Macros per serving: 23g protein/51g carb/5g fat (Cal:341)
Ingredients for the Rice N' Grinds:

Bowl Toppings:
•4 servings (2oz) chorizo seitan (split into 4 equal portions)
•160g red bell peppers cooked with fajita seasoning (split into 4 equal portions)
•120g beans (split into 4 equal portions)
•1 cup pico de gallo or salsa (split into 4 equal portions)
•serve each bowl with 30g optional avocado or vegan cheese

▻LOADED VEGGIE HASH CASSEROLE
Makes 6 servings
Macros per serving: 19g protein/39g carb/6g fat (Cal:286)
Wet Ingredients:
•1 block (350g-400g) mori nu silken extra firm tofu: amzn.to/359JGbB
•120g garbanzo bean flour
•1 cup (8oz) soy milk or water
•1/2 tablespoon salt
•1 teaspoon garlic powder
•1 teaspoon onion powder
•1/2 teaspoon back pepper
Dry Ingredients:
•1 bag of potato hash
•2 cups (175g) chopped broccoli
•2 cups (175g) chopped red pepper
•1 cup (75g) chopped onion
•1/2 cup (66g) shredded carrot
•1 block tempeh bacon
•2 servings (60g) vegan cheese
•green onion for garnish
**Bake for 60 min at 350•F**

Oh wow it’s AMAZING!!!! I used potatoes, kale, tomatoes, peppers, spinach, garlic, and onion. Made some spicy tvp “sausage” and used daiya cheddar on top. I almost can’t believe how much I love it.

Thank you so much for these recipes! Is there a difference between the shelf stable tofu and the refrigerated? I used the refrigerated this morning and they didn’t hold together well like yours but it was still delicious. 🌟
It taste better, really cheap, holds better because I has a bit less water content than refrigerated tofu.
If you find your silken tofu really watery… don’t add water that the recipe calls for.

Do you freeze the breakfast sandwiches or just put in fridge. They taste okay on the 4th day ?
I put them in the fridge… and reheat in the microwave for a minute. You can totally make more and freeze them. They hold up great during 4 days. I would not keep in the fridge for longer than 4 days.

Hi: Can you do a lunch/dinner meal prep with just beans and not tofu? I am trying to get a balance. I am a breast cancer survivor and my husband just finished radiation for prostrate cancer. (Yes. I did a radon test for both air and water and had my water tested for other things and my home is all clear.) But, soy is not good for me, but is good for him. Plus, my thyroid is crazy and I should not have soy for that either. Some beans are not good for prostrate cancer. But, we are trying to keep our fat content down because prostrate cancer likes fat because it drives testosterone. But we need protein. If I can't figure it out then we have to go back to eating meat. I do have a nutritionist and I have a natural path. Both say soy is fine ... but ... I read conflicting reports. Especially soy in relation to hypothyroidism. Any way, Sigi's has a plant based yogurt that has 10 grams, Ripple has a drink that has 20 grams, hemp hearts, and wheat germ, and after that I go blank. Help!

It is really amazing but it is not ok to eat the same meals everyday your body will have a plateau
