    I had a fermentation teacher (elder) who taught me his secret to fantastic fermented beets. He would slice or cube the raw beets and ferment those first raw. He would then remove them reserving the brine and steam the previously fermented beets beets. Once cooled he would return them to the original brine to fully ferment. This method puts all of the uncooked nutrients and flavors from the beets into the ferment liquid, which then gets added back into the beets once cooked.

      For average grocery store sized beets, I'd put the whole beets in the intapot for about 3 to 4 mins-ish. Less time for smaller beets, more time for large to gigantic garden beets.... Softens, but not fully cooked. It's not exact, sorry!

    Hello! Where are you keep them? Are they shelf stable for a while? Or you keep them in the fridge.

      These are refrigerator pickled beets so keep in the fridge. They will last a very long time in there!

    I’m diabetic the recipe looks good how about without sugar or another recipe??

      You can substitute allulose! I call it a safe sugar because it acts and tastes like sugar but it's not artificial and it does not affect the blood sugar. It's used in a lot of keto cooking. Have fun!

    Would the sweet flavoring work with raw cucumber slices in place of cooked beets? I'd like to make something close to Christmas Pickles, but I don't want to use candy. I'd also like it to keep well refrigerated, since I'm usually the only person eating them.

    To can, would placing them into a pot with water, boiling for 15 min and then placing upside down and covered do the trick?

      I took a class on canning from the agricultural department here in Florida. We made salsa and the teacher said if it has garlic it has to be pressure canned. If it doesn't have garlic it could just be canned in a water bath. Who knew? So I'm wondering in the second recipe where she used garlic it may not be wise to can as described above!🤷

    The jars looked like pint size in your video but you referred to them as quarts, I made the brine using your recipe. It was enough for only one quart of beets so I think you are using pint jars. you don't say how to store and for how long so I set on counter over night then refrigerate and consume in a month. I'm also planning to omit the sugar in future batches since beets have their own sugar.

      Yes , pints! Overnight on counter, then Store in the fridge and they'll last for years👍
