Instead of using eggs and mozzarella in every recipe I'm going to use beets and cottage cheese. It's going to be wonderful. Just you wait and see.

Great recipe I soaked the eggplant in vinegar then pat them dry rub some olive oil on each of them
Then I sprinkled, garlic powder, onion powder, turmeric powder,black pepper then light fry each side to get brown
Then add the cheese I add tomatoes tasty
Just made it!! Used white and Japanese Eggplant from garden!! So good TY!!😊

I know a better recipe using only one egg, one eggplant, no cheese required (unless you want it fancy. Tortang talong is simple, delicious, smokey and you don't hide the aubergine with loads of eggs and cheese. 😂

Tortang talong- roast an eggplant til all parts are charred. Cool and set aside. Beat an egg, season with salt and pepper ( you may add garlic powder or chili flakes if preferred). When egglant has cooled, peel the skin and mash with fork. Pour the beaten egg over it and fry 2 minutes each side.
Wont be bland? I suggest adding chilli powder & turmeric to the eggplant. And putting some dried herbs into the egg.
