I use old icing to practice with, but I've heard some decorators say they just use plain shortening. It will be softer than real buttercream, but the nice thing about a practice board is that you can scrape off whatever you're using and put it back in the piping bag.

Once they've dried and set up, royal icing flowers will last indefinitely as long as you don't get them wet, expose them to extreme temperature changes, or drop them. With buttercream flowers, it really depends on your climate and whether you used any perishable ingredients when you made the icing. When I worked at a bakery, we would sometimes make roses up to a week in advance, but you may have to keep them in the refrigerator.
