In my personal experience, it is better to fill the bread before cutting the ends so you can get uniform even edges. Whatever filling wasted is so little since I also do not spread it to the ends since I know I will be cutting them out. In my kitchen, nothing is really wasted because my dishwasher enjoys them all. Yes you can. If you have a good refrigerator, you can keep the filling for 4-5 days.

Filipinos like sweetened fillings. I use condensed milk instead of sugar because it is creamer. Sugar can make the filling watery. You can omit.
