    I have watched at least 50 of these documentaries on this subject. All have good information. But this is the best one of all. It's face to face, intimate conversations with the pioneers on plant-based eating, with some great cooking to break it up. Great job!!

    C. minute 1:08:00, there is no need to throw away the seeds and core of the Sweet Peppers (or any other peppers). Best to use the whole food. It is amazing how much food many of us unconsciously, but habitually throw away or otherwise waste.

    Awesome film. I was a meat lover all my life but recently... I don't know why ir how but my body started rejecting animal flesh and I feel repulsed even when I think about eating it so I've been eating vegetarian meals lately and since u absolutely have no idea what is there to eat besides salad and roasted veggies, I'm doing research on youtube. It's nice to see there is such a huge community and collection of knowledge and resources. I'm learning from scratch and applying in my day to day. I love the feeling I have in my body nowadays...i feel more alive, light and energized...this diet is agreeing with me 100% 🤸💃

    I am starting my journey after being diagnosed with breast cancer (have been told by my geneticist that I am high risk for stomach, pancreatic and ovarian cancer) after genetic testing. Mother diagnosed with ovarian, grandmother died from pancreatic and grandmaster of stomach. Had a full mastectomy and am a week out of hospital! Will over the next week sort life and make major changes. I am lucky as I love veges, fruit, tofu already! Still look at keeping white fish at this stage. Cutting all sugar, processed foods, dairy and red meat.

    I super like this documentary. A big help for me, looking for a right healthy lifestyle. I'm a vegetarian lover, and I wonder why Im still have lots of diseases. I just learned today that the culprit is the oil in Vegetarian diet. Thank you for sharing this videos. I'm blessed with this🥰🙏

    Thank you everyone who are involved in this video. This is great blessings to the world. I asked every question that are in the video. The answers are precise. direct, and straight to the point. I have read books and watch online regarding health. Helped myself and many people around me except my dad. My dad asked me to study about food and health. He said he is willing to pay but it was too late. I worked and studied MIS and graduated with masters. Hopefully earn more money to lighten his burden but didn't expect other siblings to demand money from him.

    I will moving in this direction. Two questions: What is nutrional yeast? What kind of bread did you use for croutons?
    I had a complete stop in weight loss. By cutting soy, dairy, sugar, corn, peanuts, most meats and oils. This includes all sub groups. Guess what, weight came off. Discovered Stevia, had sacherin in it. Anyway, I began eating more veggies whole...love it. Feel so much better. Like your approach. I like that you put everything in Mason jars. Your selling nothing other then a healthy lifestyle, not products. Thank you!😎💜

    The only thing that bugs me about so many plant-based recipes from North America is that they contain ingredients that can be quite expensive in other places around the world - tofu, nutritional yeast, nuts. And also often need some kind of chopping machine to blend the ingredients. (I think it is time I made some videos looking at wholesome plant dishes that can be made with a knife, and cooked in a pot or pan.) 😊

      He said in other countries. I would add that these recipes use various kinds of nuts such as cashews and peanut butter and sometimes a tablespoon or more of oil. Over the course of a week the polyunsaturated oils that Dr Essylstin, and the other WFPB gurus l trust, forbids. adds up. Dry powdered peanut butter is now availble at grocery stores and virtually fatfree. Just add water and stir. Nutritional yeast is a cheese flavored powered yeast that is high in B vitamins.

    Well done documentary, however, I prefer plant based menus that don't use the name of animal products, such as "meatballs." I would like to forget about meat. And I prefer to eat my plant foods raw, not cooked, and have for over 20 years now, and suggest viewing the Pottenger's Cat's video on this subject. There is only one species on Earth that cooks its food - humans.

      I was told I was "pre-diabetic" and then learned that the chances of Alzheimer's increase by 400% if you're "pre-diabetic." SO:
      1) First I bought a simple $30 device to check my fasting blood sugar every morning.
      2) I went on Keto for just a couple of weeks followed by low carb.
      3) I take my blood sugar every morning and it's almost always under 100.
      4) Occasionally, I take my blood sugar 2 hours after a meal and it's around 110 (not bad.)
      5) Two months later I had my A1C blood check and I was no longer "pre-diabetic."
      You can do this -- take charge of your food intake and get rid of that diagnosis!
      Modern medicine is great for heart surgery and car accidents but for overall health, it stinks and we need to become self-educated in order not to have a very poor quality of life (and following "functional medicine doctors" online helps -- they don't just prescribe drugs, they work to make you well (of course they're not covered by insurance if you see one in person.)

    I’m confused. Esselstyn and Campbell say no oil, no sugar, etc, but they are used in these recipes.

      I would use it as a guidepost more than a hard/fast rule.
      I was diagnosed with Type 2 Diabetes and my response was to go whole foods plant based, with regular exercise.
      I still use a bit of oil but no added sugar. Stevia instead. When I stirfry for example, I use 2 tablespoons of oil instead of a generous coating. So far its been wildly successful.

      Olive oil and avocado oil are not processed, like seed oils are processed under high heat and become toxic.

      @@Rusty6507 the processing isnt the problem. Both avocado oil and olive oil have saturated & trans fats. It has to do with other factors like polyphenols and nutrient density. Seed oils have undoubtedly improved overall human flourishing. They are cheap and provide abundant calories for most of the world's poor. The problem also lies in too much consumption of see oils.
      In western diets its normal to say, JUST eat french fries or other fried foods and consider that a meal. By contrast, in Japan lots of people eat fried food regularly, also cooked in seed oils, but they eat far smaller portions that are coupled with fresh veggies and grains. Not to mention the vast majority of what they eat are fresh, minimally cooked veggies and fermented foods with low caloric density.

      They recommend it specifically for people with serious heart issues - to reverse disease. For healthy people, small amounts are ok according wfpb - like Dr E’s son (Rip E) who has “plantstrong”. Ideally, those oils are minimized in any wfpb eating lifestyle. The body has amazing capacity to handle stuff - unless it is already compromised.

      I've said it time and time again. You need fat for your brain. Don't starve it. Vegans have been around for less than sixty years and they've a lot to prove yet. Meat eaters have been around for millions of years. Sugar has been in our diet for about a hundred, and since the second W War, it's been dumped into everything. That is what's killing us.

    Even though apple juice isn’t ideal - I find that using apple or pineapple juice in green juice helps children to accept the green juice- just decrease it daily ! Use it as a tool to introduce!

      I have some apple trees so I make my own apple juice and apple sauce. With no added sugar. You could buy apples and do the same.
      I do eat meat but I don't eat any processed meat such as hot dogs etc.
      I have a small farm. I don't know if that makes me a homesteader ? I have a flock of chickens that spend most of their time on grass. I have to keep them fenced in because they will wander onto my neighbor's property and he complains about the free fertilizer. lol They only receive a small amount of commercial organic ( ? ) feed each day. Next year I will begin making my own feed. I also have Kune Kune pigs. I butcher them myself. I find that I get about 20% more meat than if I would have them processed by an outside butcher.
      But , from now I am intending to greatly reduce my meat intake.

    Excellent program and I appreciated hearing from doctors who are nutritional giants.
    One small thing: When Craig made Broccoli Salad he used Broccoli raw and if you don't blanch Broccoli and Cauliflower (10-second boiling and fast cooling) you do not rid it of oxalic acid and that leads to indigestion -- I hope he'll try blanching these ingredients for a better finished dish.

      @@sunflower-oo1ff Next time you make a Broccoli Salad if you drop the cut up Broccoli in boiling water for just 10 seconds and then refresh it with cold water in a strainer you will set the color to bright green and while it will still be crunchy it will taste a whole lot better than raw Broccoli and be easier to digest too.

    Be careful with peanut butter. Peanuts that get mouldy in storage create a nasty chemicalnthat is reslly bad. Cant remember what its called❤

    C. minute 49:00, I can offer a few tips: [1] no need to add salt....it is just another addiction.....Use fresh and dried pure herbs and spices instead. [2] Avoid aluminum cookware, aluminum foil, and any pans with artificial coatings....These are all dangerous materials that eventually leach into whatever you cook in them. Much better to use high-quality stainless steel or ceramic cookware. [3] You can completely avoid frying, oils, or anything like that by putting foods into a high-quality pot with a small amount of liquid and covering the pot. Especially vegetables like these, foods will release and cook in their own juices.

      You forgot to mention cast iron. I like to with it because it is thick and I'm less likely to burn foods. I knew about aluminum and the non-stick coating. Cast iron will do the same as aluminum. That is it leach small amounts of iron into foods. However , the iron is beneficial to us. People eat liver as a source of iron. But , if you are not eating any liver .........

    No wonder we are confused!
    So you absolute bring to the front exactly how we think about our present health situations and how to prepare these wonderful fresh organic plant foods! Thank you so much!
    I am on Prednisone for PMR, an inflammatory disease which can go away! I am weaning off the medicine
    after only two months on it! So my duet is very important along with exercise which I do daily beach walks with gentle jogging!👏👍
    But the confusion of exactly what is good and what is bad has been solved with your wonderful video! Hearing the researchers address our problem to survive the processed food that is offered to us is extremely helpful! I drink lots of water with lemon and get a good nights sleep! Time to do this and patience help us be positive about getting better! Thank you again! A very important video for our healthy existence!

    The precursor to most of these chronic diseases is usually high blood pressure your recipes look wonderful but I see a lot of addition of salt and processed ingredients which could add a lot of salt. If the amount of salt compared to the calories involved and the ratio is 121 or below that matters acceptable and most vegetables contain sufficient salt

    I can give up a piece of meat, and actually don't really eat all that much meat. I eat bans, lentils, split peas. Love veggies. BUT, I love goat milk and I love eggs....2 things I find hard to give up. HATE tofu....in any form. I dislike kale; too bitter, but have incorporated small amounts into soups or in my green drink.
    It is difficult to know who to believe when it comes to healthy eating. Moderation seems a key to me. I shy away from meat knowing all the hormones and other injections that animals get. I prefer whole goat milk, just how it comes from the utter, but I don't use a lot of it. I eat the whole egg, yolk and all, that's where the Latin and other nutrients are.
    Going all plant based, where do you get B12?

      you dont HAVE to eat anything. Just do what works, and always aim for long term changes. Maybe you dont like tofu right now. Perhaps you will find a way to enjoy it later. If you never eat tofu, there are so many plant-based options out there that you could otherwise enjoy. Just get creative and try, try, try new things.

      No reason to eat kale or tofu if you do not care for them. Eat other veggies and legumes you love. Keep crowding your plate with the veggies. Eventually the unhealthy stuff will have less and less room.

    I agree with diet relating directly to your health. But it is not meat which is the problem, but the manufactured food. Everything in a package. They have all been heated, salted, and have food additives. As a women who cannot eat wheat and suffers from low iron without eating red meat an all plant diet would make me very ill.

      Eating any meat is a problem. Don't spread misinformation. There are tons of non-wheat, non-meat foods with more than adequate iron.

      Hello dear , commercial meat has everything done to it to make it appealing. I'll give you a little clue. Stew meat !! It is only meat that could not be sold any other way. So it's cut up and called " stew meat " ! You can make your own stew meat by cutting up a chuck roast into stew meat. Try this for better meats. Go to a Farmer's Market and find a farmer that butchers his own meat. That meat has not had anything done to it. You should visit the farm to see how the animals are raised. If you are satisfied , buy from him. My animals are all organically raised. Chickens , ducks , geese , quail , rabbits , even my pigs . I have some loyal customers but I don't sell a lot because the government says that I can only sell from my farm because I am not government inspected. By the time that I paid the inspection fee so that I could sell off my farm or in stores I could no longer afford to raise my animals organically. I would have to go into a more mass production. By the way , when you see the USDA organic label ? It means that the farmer or producer can use man made chemicals and still call the produce " organic ".
      I know how it is to be allergic to certain foods. Years ago I suddenly became allergic to all forms of legumes. Beans , peas , and especially all forms of soy. You would be surprised at how many foods are made with some form of soy in them. I'd eat a candy bar and suddenly feel my lips begin to swell. I'd read the label of ingredients and see something like soy flour or something like that. The famous Crisco cooking oil is nothing but soy oil. The solid Crisco is nothing but chemically treated soy oil. It's not lard like many people think. Some form of soy is used in dozens of commercial foods. Fortunately after a few years that allergy went away. Because I really like the Senate Bean Soup . lol
      Try other grains. You can get a small mill and make your own flour
      from other grains.

    That is such as massive generalisation saying Vegans eat Oils etc, yes many do but most either only have a small amount or avoid Oil altogether. I have been a Vegan/Animal Rights Activist for 38 years so have met many Vegans and I haven’t met any who are unhealthy from eating too much Oil. What I do think is a problem is the growing number of ( usually young) Vegans in v recent years who are eating way too much processed animal alternative ‘meats’ etc. 🌻🌎💚

      Many younger vegans don't associate oil as 'that bad' so they used a lot in their diet. Also many don't necessarily eat WFPBNO meals.

    As someone who finds the recipes in many whole food plant based lifestyle books to be nothing more than a nuisance, this documentary interrupting some really good content by some of the leading wfpb experts with a bunch of recipes by someone whose tastes are extremely different from mine just meant that the recipe segments were an inconvenient nuisance to be skipped over and waste bandwidth on. It is otherwise a great video, though.

    ❤😊 I would eat all that center of the cauliflowers and green leafes. Cut it up and place in the pot first, then the rest. Same with broccoli stems. I love making vegetable and lentil soup, and use any potato water, or pasta water, because there are water soluble nutrients in these waters. Same with the water from steaming vegetables. WASTE NOTHING AT ALL.
    🧂 I also prefer Himalayan pink salt, because it contains numerous trace minerals, or sea salt, for that matter. Table salt does not have more than sodium and iodine if enriched. Compared to pink salt, over 84 precious trace minerals are there.

    I would give Whole Foods Plant Based an A, not an A+, and reserve the A+ for a Raw Vegan diet...they don't use oil, and nothing is cooked, so keeping it close to nature as possible, and not cooking the nutrients out.

    In one of your recipes, you used a can of chick peas, and another, you used canned white beans. Aren't canned vegetables filled with preservatives and high on salt and sugars? Aren't fresh or frozen peas or beans a healthier alternative?

    Ancel Keys? 😏 I'm very sceptic on this documentary. I'm from Europe and I can tell you, the Mediterranean dieet over centuries contains also a lot of meat and certainly a lot of fish. I think sugar and processed foods are much worse then meat and fish and eggs etc.

    Great information - your recipes look and sound great -- may I offer one humble critique? The overuse of "I'm going to go ahead and..." gets irritating after two or three recipes. I am committed to this food and really, REALLY, appreciate your hard work compiling all of this information in one place along with recipes to start with, but please watch out for the "go ahead" habit - it is a real distraction. :)

    olive oil is not the enemy - look at the ZOE studies. Also too much much salt used in these recipes. Hidden salt in tofu, soy sauce is lethal for salt.

      There is no hidden salt in tofu. He doesn't use a lot of soy sauce for cooking. It is better to eat a whole olive fruit than eating olive oil.

    I hate these super biased documentaries. Yes salmon, pasture raised eggs, olive oil are good for you. That’s almost proven at this point. Having a ton of fat isn’t the problem it’s the type. Vegetarians eat a shit ton of processed food because it doesn’t have meat. That’s even worse. There’s a lot of good advice in this but incredibly biased. He had to dig up these fossils to prove this 1950 opinion.

    Correlation doesn't equal causation. A country that consume a lot of meat has a higher level of certain diseases than one that consume more vegetables. Your conclusions that eating meat will cause such diseases. Any sample size of what actual data.

      Soak nuts to remove oxalate. Wash and cook dark greens and many are already low oxalate. Bok Choy, mustard greens for example.

    Whole grain bread or Oatmeal for breakfest isint good even when its whole (better with crust on so nutrions are there if u must eat that) because its oxidated and makes inflamation on ur body! there is no reason to put maple suryp in there, or raisons sugar sugar sugar! Boiled egg is so much better and freash lemon water and thats a fact❤
