Children’s Day Special|Yummy and Easy-to-make Cupcakes

  • Ingredients (Makes 24 cups)
    320g plain flour
    1 tsp baking powder
    1/2 tsp bicarbonate of soda
    2 tbsp sugar
    300 ml Milk
    200g Butter, at room temperature
    2 tsp vanilla essence
    3 eggs
    1 cup of vanilla buttercream (400g)
    Preparation
    1. Sift flour, baking powder, bicarbonate of soda, salt and sugar into a large bowl.
    2. Add milk, butter and vanilla essence.
    3. With electric mixer, beat at medium-low speed until smoothly blended. Increase speed to high and beat for 2 minutes.
    4. Add the eggs and beat mixture for 1-2 minutes. Don’t over mix.
    5. Divide mixture evenly among tins.
    6. Bake for 20 minutes or until a skewer is inserted into the centre and it comes out clean. Cool in tins for 7-10 minutes and transfer to rack for complete cooling.
    7. Ice top of each cake with buttercream using design/pattern of choice. Piping is optional. Get creative.
