3 medium potatoes (preferably oval-shaped; starchy or waxy doesn't matter)
Table salt
2 teaspoons chili powder
1/2 teaspoon finely ground cumin
1/2 teaspoon finely ground white pepper
1/4 teaspoon chicken powder
Canola oil, for frying
1 garlic clove, brutally smashed and peeled

Binging Mandy's videos. She has great recipes, clear technique and presentation, a laid-back personality, and is funny in an understated, matter-of-fact way.
This procedure seems so much less fussy than deep frying starting with hot oil. Mandy takes her snack recipes seriously and it shows.
Mandy's recipes are always so ingenious. It's either the technique or some wacky flavours combo or both. With this recipe, the clever part is def the cold oil frying technique. And the interaction btw her and her camera man, ahem husband, is so funny. "Drawn out."
This is basically my menu in the morning, crispy potatoes stick with rice and fried egg and don't forget the sambal.. it's totally awesome and be careful because later you'll realize that you eat the entire batch 🤣.
In my country (I'm from Indonesia) there's similar dish called "Kentang Mustofa" kentang is potatoes and Mustofa is the name of A chef who basically invented or introduce this dish, he's chef from merdeka palace(it's like white house), the only difference is in kentang Mustofa the potatoes is seasoned with caramelized sambal instead of powdered seasoning, and it usually eat with rice and this dish is famous for bring up somebody's appetite to 10 folds..

I made these without "gradually frying the potatoes" and it worked well. Typically moisture reduction happens at the high heat stage of frying when the water content within the potato is replaced by oil, so frying these at high heat works as well. They'll get browner, quicker, but you don't risk oil logging the potatoes.

Here in Brazil we call it "batata palha" (straw potato), you can buy it in supermarket and it is an essential side-dish to our stroganoff
