Mandy is my favorite chef. Her recipes are unique, complex, and for people who love to cook. I'm sure I'll hit one I don't like eventually but so far every one of her recipes I've made are outstanding.
Seriously, The Art of Escapism Cooking is going to be the first culinary book that I buy. The book seems to be the perfect balance of challenging and homely recipes. And the level of creativity of Mandy amazes me. When you think that she has already given a great chicken recipe, here she comes with another one. 🤯
I love how real she is ahaha. She's not trying to pretend that it's not bothersome sometimes to cook with 3024328 ingredients. But we do it anyway because it tastes much better. 3:36 made me laugh out loud, she was so done!
I followed Mandy for awhile on her blog. It's a nice surprise to see her on video. I'd love to see more from her. The chicken looks crispy and delicious.

I’m a home cook married to an excellent cook a d (ex masterchef) I’m not really allowed in the kitchen so I make cold and hot smoked salmon, cure single muscle meats such as pancetta guanciale and bresaola. I make jams etc so my wife and I both understand techniques and technicalities. Your bool takes this all to a different level. Thank you. Your book is entertaining and a complex blue print on how to do better.
Chinese Hot Chicken! That’s brilliant! Far more complex than American style. Put that paste on meat side and oil on your whole crispy panfried chicken after cooking. I bet that would be good too.

This looks fabulous…yet a bit intimidating for me…although I am a good home cook. Also intrigued about the spice level. It has been a long time since I have had Sichuan food. Lastly, I will need to figure out where to get the chili’s where I am at. Any ideas online? All this said…I definitely would like to try this. I see the question on what to serve with this…I am not sure but it would be great to know!

I’m not sure if you’ve been to a Chinese hot pot restaurant, but my house smelled exactly like it. The flavor of the chicken was like the spicy Chinese hot pot broth, minus the spice. Chicken was super moist and flavorful throughout. The skin wasn’t as crisp as I’d hoped. I think double frying the chicken will ensure crisp skin. Mandy’s video definitely helped with the whole process and it was not very difficult.
I have Mandy's cookbook now and plan on making chili oil soon with flakes bought online. I have the lime leaves as well (but only found dry so we'll see what I can do)
Use hot fry oil instead of butter like she does here (or just use the mixture while it’s very hot). Korean fried chicken uses hot spiced oil to keep the crisp and add the flavor. Joshua Weissmans Korean fried chicken is a good demonstration of this on RUclips.
What would be the best gluten free flour sub for the wheat flour? I'll be amazed if I can find GF broad bean paste. Many Asian condiments are a challenge for we celiac folk.
Why not just make the Chili paste with Judy oil, then when you want to use it, melt the butter and add the amount of mix thst is needed? Would probably add a ton of shelf life.
With Korean fried chicken, you usually use some of the fry oil as the base for the spicy oil and because it’s still piping hot that’s why the chicken ends up still crispy. I’m also surprised this recipe prepared the butter and spices so early on in the prep!

Just made and ate. Wow that was good. If you use small Chinese dry peppers for mala go real easy. A 1/4 cup will burn your house down!
