Nice one Dan, can’t wait to see the mods. My advice would be that whatever you do, keep it as lightweight as possible. Love the standing deck, I really miss that on my GT, the amount of storage in my pod is the trade off I guess, but being able to fish standing up and, most important, stretch your legs and change position during a long day on the water is really good 👍🏼
Have a look at the Yotube channel My Lure Box and watch the Feel Free Lure mods he did to his kayak. I’ve followed a similar style with his and it’s an amazing little modification
First thing I'd do is chuck a keel guard on there, either DIY or buy one, will extend the life of it 😎 I just bought my first fishing kayak and have been making a keel guard out of PVC. Just to prevent any major damage to the hull when loading and unloading in my trailor or when launching/landing. Simple little diy that won't add too much weight 🤙 also think some LEDs in there are a must for the early morning/late evening sesh's.

Yea for an introductory kayak the Dragon Kayaks are great. Super stable and tough on the underside. I have also just recently got a Viking Ozzie an it will be great for the super skinny creeks and pools where this one may be a bit too big

I would suggest a lithium battery if you choose to get a sounder/electric motor.They are much lighter as much as 50% but more expensive.
Yea I was thinking of heading that way anyway for the electronics. I have a lead acid battery in the canoe and it weighs me down a bit

What are the advantages of the rudder?
Keeps the kayak on track and prevents it from turning from factors like current and wind. Helps you steer and makes the paddle a lot smoother
