I started watching Food Wishes videos back in 06 or 07, long before the youtube days. Id like to see Chef John get back into the recipes that are complicated and take 6+ hours to make. He doesnt NEED to make those sorts of recipes anymore, but it would be fun to see them again.

We are in a time line where cook shrimp in pastry and go "oh man the egg gonna break the bank" If i could explain this concept of this to somebody in the medieval times they would drill a hole in my skull to let the bad spirits out
Probably wouldn't shock them too much tbh. Fish and seafood was often pretty cheap peasants food in the middle ages. The most "expensive" part would likely have been all the butter for a puff pastry, (and the necessary temperature control to laminate it )
I don't think they even knew what a regular flu virus was, let alone bird flu. Everything was blamed on smells and bad humours. I'm glad science has come such a long way, though I do wish they would bring those cool plague doctor masks back 😛
As kids, we always knew when Dad was cooking. Freaking garlic. Also, a pot holder found in the middle of a meat loaf. I think the secret ingredient was scotch.
I'm picturing the flakiness of bread mixing with that unique sinewy rumble of a bite into shrimp. My mind is telling me those don't taste good. A rare thought when watching a chef John video.

For Pigs (of the Sea) in a blanket I use the Pillsbury Crescent Rounds instead of Crescent Rolls. They come in strips instead of triangles so there is no need to roll and cut. Using Lil Smokies you can cut each of the eight strips into thirds for 24; my guess is cutting each in half for 16 would work for large shrimp.

I LOVE that the silpat isn’t brand new. It drives me crazy to watch cooking shows where they use pots, pans, trays, cooking sheets that seem to have just been taken out of the packaging

can these be made and refridgerated in advance? maybe use clarified butter on dough before filling to prevent marinade seeping into dough? help? anybody ?
That part has to be substituted. But even store-bought puff pastry, etc., is full of not so healthy ingredients. Some day I might try making puff pastry from scratch but no doubt it will be not only the first but also the last time.
If you think the store bought frozen puff pastry stuff is any less processed/filled with additives than that Pillsbury stuff*, I have a nice bridge with ocean view on offer

Little tip to get 6ths a little more evenly, divide the dough in thirds first, then those in half. A little easier to judge and get more evenly
