- On this episode of Victoria Takes on Sweets I wanted to discover how baking with different types of flour influenced the texture, taste, and color of a cake. In this video I make two 6-inch vanilla cakes, one with cake flour, and the other with all-purpose flour. Check out the results, and find out which one I prefer most.

I only use Swan Downs Cake Flour. I learned this from a woman who started a business baking cakes at home. She only using Swan Downs Cake Flour for her cakes, cupcakes, and cake pops. Unfortunately I only make one cake which is the Swan Downs Cake Flour recipe. LOL. Thanks. Great video.

swans is not a good product has bleached flour in it which is bad ingredients king Arthur is the best i unbleached better ingredients
The cake flour usually has lower % of protein than all purpose flour. So less protein less gluten
This cake flour and all purpose, it's so good to try, I'll try to make one, one day

I have been making scones, using part pastry flour - and I find the butter runs out of it vs being held in by the flour. It actually resulted in a fantastic outcome - somewhere between a crumpet and a scone. I used parmagiano and currents in the scone batter. When I put them in the oven, using part pastry flour, the butter pooled on the pan - so I flipped the scones every few min - and it caramalized the outside. Scrumpets :)

I’m so happy I found your video! I use the HEB brand cake flour for all my cake orders and wondered if I was over paying and wasting my time stocking up on boxes when I could just be using AP flour.

Cake flour had the lightest protein content. Which makes it perfect. All purpose has middle amount of protein. Good for cookies quick breads etc. and bread flour has a high protein content

Try putting your all purpose flour and cornstarch mixture through a food processor to refine it even more and try this recipe again and compare.
Great video, was wondering about this. I think most people throughout life have cake that is made from all purpose flour, so to get a cake made with cake flour is going to feel/taste have different texture than the all purpose flour cakes we have grown to love. 3:28 The cake flour is whiter because it is bleached. The all purpose flour (of the brand you bought) is unbleached.

Just going off of your judgment.. I think for me I like a more dense cake .. so ide probably stick to the all purpose flour myself.. (although ide want To give the cake flour a try to see for myself..).. but I'm sure like maybe for specific cakes that it may be more favorable to have a more light texture cake flour would be the one.. but over all.. me too I like a more dense cake..
Yes, I think I prefer the texture of an all purpose cake, although the cake flour cake is still delicious. It’s just a texture preference for each person.
Thank you for this. I am about to make a lamb cake with my grandmother’s cast iron lamb mold. I’m glad I can use all-purpose flour because I don’t want to go to the store today! Also I need a more dense cake.

I use all purpose flour for everything cookies cakes ect and I realized anytime I made one of those they had a similar taste and to me the taste was weird and I hated the taste so much. And I also realized the all purpose was heavier and denser so I tried cake flour cs I has just found out about it oh boy did that change my life it was light but still good and it didn't have that weird taste to it. I recommend cake flour but if your on a budget get all purpose cs cake flour does get pricey but if you do get all purpose add more vanilla so you don't get the TASTE.

That’s my honest preference, but there are many out there that like the cake flour texture. Everyone is different!
I find that sifting all purpose flour gets me the exact same results as using cake flour. If you want a whiter color cake then use Almond Extract instead of Vanilla. New subscriber. I enjoyed your video.
I'm not sure if you like the all-purpose because it is what you are used to, it could be the buttery and weight of the butter cream is the better match. I also like all purpose with butter cream. If I make a light confectionery sugar with lemon juice glaze, then at least for me the cake flour 'shines' meaning I like it better than the all purpose. If using these one of these two ingredients either sour cream or cream cheese in a recipe I have a hard fast rule for the cream cheese I go all purpose, for the sour cream I go cake flour. Great video. It saves us in having to make more cakes than we need. (I don't need the extra!)

Thanks for making this video and confirming what centuries of baking has already confirmed, buuuut, I think it would only be truly equitable if you took each recipe and switched up the flour - taking into account measurement differences (eg: 1 cup AP = 1 Cup+1Tbs cake flour) and making the side by side comparisons from 4 cakes.

How about cornstarch?? For all I know ckae flour has 6 - 8% of protien while all purpose has 12-14% if im not mistaken.. The higher the protien the denser the cake
Yes, you can definitely make your own cake flour by adding cornstarch to the all-purpose flour. For every 3/4 c you add 2 TBSP to get the same effect. I havnt tried it though, I just buy the cake flour for convenience! Lol But that’s a good video to do! I’ll have to do a compare and contrast on that!

I like the look of the all purpose flour. We don't use cake flour here in the UK so I will stick with what I have grown up with - we call it plain flour. Our cakes taste delicious, and I get nice compliments everytime I bake, lol. PS: Cake flour is not widely available and it is expensive!!

Actually u can turn APF to Cake Flour by just replacing 2 tablespoons from a cup of APF with 2 tablespoons of corn flour

Cake flour should be slightly more airy and tender.
Yes that’s what I’ve found. I still think I prefer the all purpose flour texture but I know many enjoy the lighter texture!

Yesterday my first time make a homemade cake I used cake flour ..n it can out like cornbread! Lol I dont know wha I did wrong 🤷♀️
Did somthing else wrong or wrong recipe.
My only thought would be maybe you overmixed the batter 🤷🏽♀️ That has happened to me before and it’s usually due to overmixing. When mixing cake batter it should be done JUST until combined. Hope this helps for your future baking!
You should’ve done 31 with cake flour, one with home-made cake, flour and one with plain flour
Aren't you supposed to sift when you use all purpose flour?
Sifting helps break up any lumps/clumps and helps with a more even texture, but isn’t mandatory. If someone doesn’t have a sifter they could just use a fork to “fluff” the flour.
Can I just substitute as the all purpose flour for cake flour as it is in the recipe, please help, thank you?
The cakes look underbaked. If you don't make chiffon cake, there is not much difference because the recipe of chiffon cakes is much lighter and will only work (ie. Not collapse) if the flour has less gluten, thus cake flour.

Hi 👋🏼 if you are looking for an All-purpose flour, King Arthur is well known. However I use my neighborhood grocery store brand and it does just fine. Plus it’s cheaper. If you are looking for Cake Flour, I usually chose my local grocery store brand and it does just fine for me. But I know a lot of people use Swans Down or King Arthur as well. I don’t know where you are located, but I find it hard to find name brand Cake flour. Hope this helps!
LMAO!! 😭 I didn't know you can use all purpose flour in making a cake!! , i bake using all purpose in my birthday and it was my first time and i panicked because when i mixed the ingredients, it became thick and sticky so i meltdown and thought it was failure instead of crying i turn them into cookies 😂

For both cakes are the recipes the same and just replace the cake flour and all purpose flour? I wanted to know if baking powder is added to the all purpose flour cake and not the cake flour recipe. Thanks!
They are actually two different recipes. If you look in the description I’ve linked both recipes there.

You can add cornstarch to your all-purpose flour and get the same result. It’s basically for every 3/4 cup of all-purpose flour you will add 2 TBSP of cornstarch or I believe it’s called corn flour in the UK. Hope that helps!

I use my local grocery store brand HEB. They have HEB Organic Cake Flour and The Bakers Scoop Cake Flour. But I’m sure any brand would be fine.

I hate cake flour because it literally melts in your mouth like cotton candy and what’s the point of eating a cake if its so airy that you barely get any actual cake
Lol, I must say, after doing this review I’ve found that I’m not a huge cake flour person either. My husband seems to like it but I agree, the texture isn’t my cup of tea but quite a few people like it. Something about the texture of an all purpose flour cake that does it for me!
